Easy Coconut Macaroon Pie

This coconut macaroon pie is delicious and simple to make. Everybody in my family and friends asks for it when we get together. When I needed a pie for a bake sale, someone gave me the recipe. I frequently multiply this recipe by three and end up with two deep dish pies.

Ingredients

  1. 1 pastry for a 9-inch pie crust
  2. 1 ½ cups white sugar
  3. 2 eggs
  4. ½ teaspoon salt
  5. 1 ½ cups sweetened flaked coconut
  6. 6 tablespoons butter, softened
  7. ½ cup milk
  8. ¼ cup all-purpose flour

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Press pie crust pastry into a 9-inch pie pan.
  2. Beat sugar, eggs, and salt together in a bowl until smooth. Mix coconut, butter, milk, and flour together in a separate bowl; stir coconut mixture into sugar mixture. Pour mixture into the pie crust.
  3. Bake in the preheated oven for 1 hour. Allow to cool completely for pie to fully set up.
  4. Don’t melt the butter completely, just have it soft and do not bake at a higher temperature because the pie gets too crusty.

I enjoyed the pie and it was simple enough to make. I did use unsweetened coconut in mine and would highly recommend cutting back on the sugar. All in all it was a nice pie. Thanks for the recipe ??

Really easy; really yummy. One comment said to use less sugar, and add vanilla. It was delicious and disappeared quickly

Fantastic! Definitely a macaroon texture. This is NOT a custard-y pie, but it is delicious! Only had 3/4 C of sugar on hand and it was MORE than enough when combined with the sweetened coconut. Any more would render it waaaay too sweet. Also added vanilla because, well, vanilla. About halfway through cooking– foiled covered the pie crust and sprinkled some more coconut on top for a little toasted flavor. Did I mention how easy it was to make?

nice, tasty pie. Turned out well 1st time. But a little too sweet as written. Next time I’ll try 1-1/4 c sugar & 5 T butter. Also will make sure it cooks no longer than 1 hr…maximum. A keeper!

I have made this twice to take to family/friend gatherings. It disappears and everyone raves about it! Once, I drizzled my special dark chocolate sauce over the top … Yum! Also, it doubles well!
