Easy Coconut Jasmine Rice

The ideal side dish for Asian cuisines is this three-ingredient coconut jasmine rice.

Ingredients

  1. ¾ cup uncooked jasmine rice
  2. 2 tablespoons uncooked jasmine rice
  3. 1 (13.5 ounce) can coconut milk
  4. 1 pinch salt

Instructions

  1. Put rice in a fine-mesh sieve, and rinse with cold running water until water runs clear.
  2. Pour coconut milk into a saucepan and add salt and rice over medium-high heat. Stir to combine and bring to a boil. Once mixture is boiling, reduce heat to low, and cover.
  3. Cook until coconut milk is absorbed and rice is cooked through, abut 20 minutes. Fluff rice with a fork and serve.
