Ingredients
- 1 tablespoon olive oil
- 1 cup basmati rice
- 2 cloves garlic, minced
- 1 ½ cups chicken broth
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- ½ cup chopped cilantro
- ¼ cup whole-kernel corn
- 2 teaspoons green onions, chopped
- 1 lime, zested
Instructions
- Heat olive oil in a saucepan over medium heat. Cook and stir rice and garlic in hot oil until fragrant, about 2 minutes. Stir chicken broth, lime juice, and salt into rice; bring to a boil, reduce heat to medium-low, cover the saucepan with a lid, and simmer until rice is tender and liquid is absorbed, about 15 minutes.
- Stir cilantro, corn, green onions, and lime zest into rice until well-mixed.

Really easy and delicious. I didn’t have any corn so left that out which I would prefer to do in the future as well. I used Argorio Rice instead of Basmati. I served this with beef tacos, steamed cauliflower, and fresh pared English cucumbers from the garden to my daughter and her family. She served peach cobbler for dessert, such a great meal. I was confused; Basmati for Mexican?? I nearly substituted long grain but forced myself to follow the recipe. Which! I did and! This turned out very good! Guests loved! They agreed texture wasn’t exactly what they were used to but all agreed this was great for our fajita bowls! Thanks Leanne!

This is so good!! Goes great with fish of any kind. I cook it up all in my instant pot. Saute the rice and garlic on “sauté” mode then add the chicken broth, salt and lime juice. Put it into “Rice” mode and it’s good to go. Add the zest and corn at the end. Love it!
Great rice side dish that’s simple to make! It has a nice mix of lime and salt flavor, plus we love cilantro. We served it with grilled sirloin and veggie kabobs. We made it as is, except without the corn as we didn’t have any at the moment.

I wouldn’t exactly call this “easy”. The prep took quite a while.Plucking and chopping cilantro takes time, as does zesting the lime. Watch your rice. It took me about 12 minutes to simmer it. This is a great way to cook rice!
