Ingredients
- 1 tablespoon butter
- 2 (5 ounce) boneless, skinless chicken breasts, cubed
- salt and freshly ground pepper to taste
- 1 tablespoon olive oil
- 4 green onions, chopped
- 2 green zucchini, cut in half lengthwise and into 1/4-inch slices
- 8 large fresh mushrooms, sliced
- 1 tablespoon all-purpose flour
- ¾ cup heavy whipping cream
- 1 tablespoon chopped fresh parsley
Instructions
- Melt butter in a skillet over medium heat and cook chicken until slightly browned, stirring frequently, 5 to 7 minutes. Season with salt and pepper and transfer to a plate. Cover with foil or a bowl to keep warm.
- Heat olive oil in the same skillet over medium heat and cook green onions until soft, about 2 minutes. Add zucchini slices and cook until softened, about 5 minutes. Add mushrooms and stir to combine. Return chicken to the skillet and sprinkle with flour. Stir in cream and cook until sauce has thickened, 3 to 5 minutes. Sprinkle with chopped parsley.

This was good, but not as creamy as I had hoped for, with the intention of putting on top of spaghetti squash….. But that could just be because my zucchini’s were probably a little bigger than intended. Flavor was good, next time i will just add more cream and adjust the flour accordingly. Some other spices would go well too.

Super savory, super easy, super quick and super delicious!! I reduced my cream sauce for 10 minutes more on low and then turned the heat off and let it sit before serving. Next time I will chop my zucchini instead of slicing.

I am pleased with the results. I used one chicken breast and sliced it rather than cubed, and cooked it till just barely done and added some (Kinders Salt, pepper and garlic) mixture to the chicken while frying. I also was worried about it being bland so I sliced 4-5 cloves of garlic and cooked it till crisp, pulled that out and sautéed the vegies in the garlicy oil. No other changes but adding the extra garlic was the key. We put this over Angel hair pasta and it was perfect. and this one chicken breast fed 3 of us.
Easy to make and easily able to make variations using different veggies. Could even put over rice or mashed potatoes even.
I made this almost exactly to the original recipe. The changes I made were using chicken thighs & 1/2 & 1/2 rather than the heavy cream. It was delicious! I will certainly be making this again !!! YUM!

This was okay, too much zucchini for the amount of meat. I liked the two step cooking method, the chicken and vegetables were perfectly done. The sauce was tasty in the pan but definitely got lost served over rice. This might be best eaten alone in a bowl like a stew.
I’m rating the original recipe as a 4 as written and a 5 once I was done with it. Very yumm. I added a big garlic clove while cooking the green onions and added some red pepper flakes with extra fresh parsley at the end. I also used 10% creamer and skim milk, in equal parts, as that was all I had on hand.
BLAND. A ton of ground black pepper, half a ton of paprika. Nothing. Will try real seasoning on the chicken and maybe some sour cream or dijon mustard next time. This recipe has promise, but it is definitely needing work.
Delicious! I didn’t cut up the chicken – I dredged it in bread crumbs, browned, added all the other ingredients, then cooked until done. I used half and half instead of heavy cream. This was moist and delicious.
Made this for dinner and was delish! I did cook my zucchini on the side by sautéing they in some olive oil garlic and pepper just to have something lighter as a veggie but this sauce is absolutely amazing!
Added McCormicks Montreal Chicken seasoning during the chicken cooking process. Used light cream. Came out amazing!
It wasn’t a bad dish. My family did not complain about it and the Youngest devoured his plate but the original recipe to me tasted bland so I gave our 12 yr old a taste test and then gave him another taste test where I added cumin and curry powder. He much preferred the latter of the two.
Substituted marinara sauce for whipping cream. Delicious.
This recipe was really easy and suuuuper delicious! I used chicken thighs instead of breasts because that’s what I had. I put this over a bed of cheddar broccoli rice. YUM !
