I’ve never been a fan of fresh ginger or cauliflower, but I adore this straightforward and delicious meal. Serving it with garlic or crusty bread makes it even delicious.

Ingredients
- 2 teaspoons olive oil
- ½ cup chopped onion
- 1 large head cauliflower, cut into florets
- 3 cups chicken stock
- 1 (1 inch) piece fresh ginger, chopped
- 1 ½ teaspoons sea salt
- ground black pepper to taste
Instructions
- Heat oil in a large pot over medium heat; cook and stir onion until fragrant, 1 minute. Add cauliflower and cover. Cook, stirring occasionally, until slightly tender, 10 minutes. Add chicken stock, ginger, and salt; season with black pepper. Bring to a boil, cover, and simmer until cauliflower is tender, 30 minutes. Cool slightly.
- Pour soup into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return to pot and warm over low heat. Serve immediately.

Delicious soup! I sautéed the cauliflower first, then added the onions. Also added minced garlic for about a minute before adding the chicken stock. I like a little heat, so I added a few dashes of cayenne pepper and it was perfect!

amazingly delicious just as written……although i would prefer that it gave a more exact ginger measurement, lol, an inch of ginger can vary in size a lot.
This is now one of my favorite Soups! Just added an inch and a half ginger.
Its a very tasty soup, specially considering the minimal ingredients. I served this low fat and low simple carbs soup to a group of friends. All of us really enjoyed it. I used ground roasted cumin instead of curry powder and a small quantity of red pepper, and puréed it with an immersion blender. I will be making this again. Thank you for the recipe!
The soup came out tastier than expected. I actually made this in a pressure cooker, then put it in the food processor. It came out like the picture. Very creamy and smooth.

Had some leftover cauliflower from Thanksgiving and decided to make an easy soup as an appetizer for this cold winter day. I enjoyed the flavor along with the addition of fresh ginger. I served it along side some slices of garlic naan bread- which paired well with the soup. Very easy and healthy soup to make! However, I did cheat a little and added a little bit of heavy cream at the end for a extra creaminess.
