Easy Beef Enchiladas

These are the finest cookies ever! Since these won’t last long, they ought to be called disappearing cookies. Set a timer; these cookies taste best when they are just beginning to brown.

Ingredients

  1. 2 pounds ground beef
  2. ¼ cup chopped onion
  3. 2 cups shredded Cheddar cheese, divided
  4. ½ cup sour cream
  5. 1 tablespoon taco seasoning
  6. 1 pinch salt and ground black pepper to taste
  7. 2 ½ cups red enchilada sauce
  8. 1 ½ teaspoons chili powder
  9. cooking spray
  10. 1 (10 ounce) package flour tortillas
  11. 1 (15 ounce) can black beans, rinsed and drained (Optional)
  12. 1 (6 ounce) can sliced black olives, drained (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch casserole dish with cooking spray.
  2. Cook and stir ground beef and onion in a skillet until beef is browned and crumbly, 5 to 7 minutes. Drain off grease. Stir 1 cup Cheddar cheese, sour cream, taco seasoning, and pepper into the beef mixture until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
  3. Warm tortillas in the microwave for about 1 minute. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll tortillas up and place in the casserole dish, seam-side down. Spoon any leftover sauce, black beans, and olives over the tortillas. Sprinkle remaining cheese over the top.
  4. Bake in the preheated oven until cheese is melted and filling is bubbling, about 20 minutes.
  5. Substitute white sauce for the enchilada sauce if preferred.

The only 2 things I changed, because they were what I had on hand, we’re corn tortillas instead of flour and black bean refried beans instead of just black beans. Recipe was easy and super delicious!

Found this recipe when i was looking for a quick, last minute meal to avoid caving in for takeout. For how quick and easy this was to put together, the few ingredients, PLUS the great flavor it was?! 5 stars! Because I had a green bell pepper turning orange in my fridge, chopped that up and threw in with the beef/onion sauté. I didn’t have black beans but if I did? Would have likely added them to the beef filling mixture vs on top. I could easily see adding some corn or jalapeños to the mix as well. Great recipe Meranda – perfect for any busy night meal! Thank you!

We didn’t add the olives and black beans. Other than that followed recipe exactly. I used corn tortillas. Very good recipe. I made my own enchilada sauce and dipped corn tortillas in before stuffing. Make sure you don’t cook longer than 25 min. and have extra sauce and cheese to cover entire dish. Garnish with chopped cilantro…delicious!

This is recipe is easy to prepare and is hard to mess up, so it’s a good fit for my basic cooking skills. I’ve made this a few times. The last time I used barb-b-que baked beans to see what it would be like.

Good basic recipe with a few adjustments. Corn tortillas rather than flour. I added an extra cup of enchilada sauce (so easy to make – a roux with chili powder mixed in). And I added an extra cup of grated cheddar. My visitors devoured the dish before I could take a photo. I forgot the sour cream and black beans and the dish was delicious without it.

Super simple and super good! 5 stars for sure! The flavors were very good! I didn’t add the olives or black beans, but maybe when I make these again. Great for a group!
