Easy Batter Fruit Cobbler

Using up leftover zucchini is simple and tasty with this zucchini Parmesan recipe.

Ingredients

  1. 4 tablespoons butter
  2. ¾ cup all-purpose flour
  3. ¾ cup sugar
  4. 1 teaspoon baking powder
  5. ¼ teaspoon salt
  6. ¾ cup milk
  7. 2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
  8. 1 tablespoon sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Adjust the oven rack to the upper-middle position.
  2. Put butter in an 8-inch square or 9-inch round pan; place in the oven until butter is melted. Remove the pan from the oven and set aside.

  4. Whisk flour, 3/4 cup sugar, baking powder, and salt in a medium bowl. Whisk in milk until a smooth batter forms.

  6. Pour batter into the prepared pan with melted butter.

  8. Scatter fruit over batter. Sprinkle with 1 tablespoon sugar.

  11. Bake in the preheated oven until the top is lightly browned and fruit bubbles, 50 to 60 minutes.

I made this with plums from a friend’s tree. Didn’t measure plums or butter, just kinda winged it. My family is begging for more. Seems kinda hard to mess up. I really like that. The plums made this a nice sweet and tart cobbler. So good.

I doubled the recipe and baked it in a cast iron skillet. I used about 4 cups of fresh blackberries, and added a little vanilla and lemon juice and zest. Sprinkled some raw sugar on the top when out of the oven.

I made this last night for dinner. I did replace 1/4 cup of the flour with almond flour, so 1/2 all-purpose flour and 1/4 cup almond flour. Being a vegetarian just wanting to boost the protein a little. There was none left over. So easy & delicious.

it turned out perfect but I had to put some parchment around the crust and lower it to the middle. About 15 minutes to the end and it bad for a total of 65 minutes… Other than that what a great recipe for.

I used a cast iron pan, as that what was used in the video. The butter browned initially, so I threw it out and started again. 4 T of butter seemed like too much to me. The dough was more fried than cake-like. I would use a different pan and maybe less butter next time, but it actually turned out pretty good.

I had never tasted a fruit cobbler before this one, but it was a good first experience. I followed the recipe exactly and used both blackberries and raspberries for mine. There were many in my family who had had cobbler before and they said it was delish. It was mushy, but not in a bad way. It was not super sweet, but not NOT sweet: it was just right with the sugar. My crust got a little too crispy in some areas, but otherwise it was a very satisfying desert. It was also super easy to make. I thought cobblers would be more complicated, like a pie, and was relieved to find I was wrong. This fruit cobbler is a delicious and easy to make dessert that I highly recommend for any bakers, beginner or otherwise. Edit: I have made this with gluten free all purpose flour and oat milk for a fairy and gluten free desert. This cobbler never dissapoints!!

I made it just like the recipe but I used canned pears. Also if you have a convection oven or plain ole toaster over then drop the temp by 25 degrees. I love convection ovens. They cook in half the time. Mine was ready at 25 minutes but I let it alone for 30 just to get it extra crunchy and golden brown. It was really good and I think I will use just this recipe from here on out. Don’t mind the missing corner. Quality control had to approve it.

Great quick easy recipe. I added a teaspoon of corn starch as well, and I made it with seasoned apples instead of fruit. Very nice Apple cobbler with scoop of ice cream/whip cream.

I made a blackberry cobbler a couple of nights ago and it was delicious. I used this recipe as a framework, not following it exactly. I used two 6 oz. packages of berries. I mixed about 1/3 cup of the sugar in with the berries and let them sit for a half hour or so. I used Bisquick instead of the flour and left out the baking powder and salt. I used another 1/3 cup of sugar in the batter. I browned the butter a bit first. I have read quite a number of cobbler recipes and it seems about half call for the fruit to go in first and half call for the batter first. I had made a blueberry cobbler the week before with the berries on top so decided to switch it up for this cobbler. I really could not see any difference as it was going into the oven. I cooked it for about 45 minutes and then put some sanding sugar on top for the last 10 minutes. It was delicious. Thanks for sharing such an EZ and tasty recipe!
