Ingredients

  1. 1 pound bacon
  2. 1 large sweet onion, such as Vidalia, finely chopped
  3. Four 14-ounce cans pork and beans
  4. 1/2 cup dark molasses
  5. 1/4 cup light brown sugar, packed
  6. 2 tablespoons prepared yellow mustard

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Fry the bacon in a large skillet over medium-high heat until crisp. Remove the bacon from the pan, leaving the drippings, and drain it on paper towels. Crumble and set aside.
  3. Add the onion to the pan with the bacon drippings and saute until softened, a couple minutes. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon, and mix well.
  4. Pour the beans into a 3-quart casserole and bake, uncovered, for about 45 minutes.

I made these for a July 4 party at our clubhouse for 80 people. Quadrupled the recipe using 2 – 117 oz. can from Sam’s and we ran out! Everyone wanted seconds. I have been asked to make them again for our pig roast next month and need to make 3 cans this time! They want leftover to take home!

Delicious. I used VanDeCamps pork and beans and not other beans that are already highly sweetened. It turned out great. I also used 3 tablespoons of mustard instead of just two.

Excellent! I make for most large gatherings and everyone wants the recipe. I put everything in the casserole dish first then add the fried and crumbled bacon and onions to the casserole. Doing it this way makes it easier to mix everything instead of adding everything to the skillet. I’ve made it a day in advance then baked the next day and was terrific.

Fixed these for Christmas Eve dinner, perfect made no substitutions or changes and baked are my favorite.
