Easy Apricot-Glazed Salmon

This cobbler is the fastest, simplest, and best one ever. It can be made with any canned fruit. With peaches, we prefer it most. Provide hot. Vanilla ice cream is the ideal garnish!

Ingredients

  1. 2 tablespoons apricot preserves
  2. 1 teaspoon spicy brown mustard
  3. 4 (8 ounce) fresh salmon fillets

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  2. Mix apricot preserves with mustard.
  3. Place salmon fillets on the prepared baking sheet. Brush 1/2 of the apricot mixture over top.
  4. Bake on the top rack of the preheated oven for 16 minutes. Pull from the oven and brush with remaining apricot mixture. Cook until salmon flakes easily with a fork, about 2 more minutes.
  5. Buy fresh salmon from the meat counter at your grocery store for best results.
  6. If you’re looking to make this meal even healthier, use sugar-free apricot preserves. You can use apricot fruit spread in place of preserves, if desired.

We Loved It! Easy & very favorable! I made the following modifications: – used Dijon vs spicy brown mustard – seasoned salmon filets with kosher salt and course ground pepper before cooking – air fried at 325 degrees for 16 minutes total and brushing topping again at the 9 minute mark. – broiled for 1 minute after airfrying My husband said “what an incredibly delicious combination of flavors. I keep thinking my wife’s salmon can’t get any better, but she keeps surprising me!”

So easy and quick. The skin on mine was crispy at 16 minutes. I would double the glaze for next time.
