Dorm Room Stir-Fry

When you are between pay days, this is the finest cheap lunch because it can be made in only 10 minutes. The best part: you can buy most ingredients at your neighborhood dollar store!

Ingredients

  1. 2 teaspoons sesame oil
  2. ½ smoked sausage, sliced on the diagonal
  3. 1 teaspoon minced fresh ginger
  4. 1 teaspoon minced garlic
  5. 2 tablespoons stir-fry sauce
  6. ½ cup frozen broccoli florets
  7. ½ cup frozen bell pepper strips
  8. 1 (8.5 ounce) package instant jasmine rice
  9. ½ teaspoon sesame seeds (Optional)
  10. 1 green onion, chopped

Instructions

  1. Heat sesame oil in a skillet over medium-high heat. Add sliced sausage and cook for 2 minutes. Add ginger and garlic and cook until fragrant, about 30 seconds.
  2. Mix in broccoli, bell peppers, and stir-fry sauce. Cook until heated through, about 4 minutes.
  3. Snip 1 inch of the corner of the rice pouch, and cook rice in the microwave for 90 seconds.
  4. Fluff rice and place a scoop onto a plate. Top with sausage stir-fry and garnish with sesame seeds and green onions.
  5. The leftover smoked sausage can be used in fried rice, in an omelet, or in jambalaya. Any leftover rice can be turned into fried rice.
