Doritos® Taco Salad

I adore this meal! It makes me think of summertime and potlucks. Every texture is there, including warm, chilly, crisp, soft, and crispy. With the taco-seasoned meat, it has a hint of sweetness and tanginess from the dressing, as well as the delicious nacho cheese flavor from the chips. It’s a great supper that comes together easily and quickly and is ready whenever you are.

Ingredients

  1. 1 pound lean ground beef
  2. 1 medium onion, finely diced
  3. salt and ground black pepper to taste
  4. ¼ cup water
  5. 1 ½ tablespoons taco seasoning mix
  6. 1 (15 ounce) can dark red kidney beans, drained
  7. ½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
  8. 1 large head romaine lettuce, chopped
  9. 1 ½ medium tomatoes, diced
  10. ½ cup shredded Cheddar cheese, or more to taste
  11. ½ cup Catalina salad dressing, or to taste

Instructions

  1. Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
  2. Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

One of my favs!! I always use french dressing. Add black olives and what ever I have on hand. But that french dressing adds just the right flavor.

Great for hot summer nights. I used turkey. We add black olives and sometimes avocado if the price is right. Mix Ranch and Catalina and we don’t use a full half cup unless I put a ton of Romaine lettuce at our house. Sometimes I tear up spinach leaves to add to give it some color but mostly get some more vitamins into the recipe 🙂 Yummm… regular tortilla chips are fine or any flavor your family likes.

It was good. I added the kidney beans to the cooked taco meat because I wanted them warmed. I also used sweet chili Doritos instead of Nacho Cheese. The Catalina dressing was good, but I’d like to try Ranch next time like other reviewers suggested.

Family has made this for years We use half Russian dressing and half Italian add green olives and use taco flavored Doritos Delicious

This recipe I’ve made for years. It’s a family favorite in my home especially during the summer months. Catalina just gives it that little amount of zest. I have tried using different dressings as well however, for my family it’s Catalina hands down.

I’ve been making this summer salad for years, long before someone decided to put it on All Recipes. It’s truly delicious and all the flavors do go well together. The only difference between mine and this recipe is that I use a cano of Ranch Style Beans(rinsed) instead of red kidney beans. Just because the Ranch Style Beans add a whole other level of flavor to the salad. I absolutely love this salad! Yummy!

This is a family favorite recipe for all in one dinner or pot lucks. I use red onion and mix equal amounts of French and Italian dressing. If taking it to a party next the cheese, tomatoes, Doritos, and dressing just before serving.

I had to laugh when I saw this recipe! My ex-mother in law used to make this and I remember thinking what a strange concoction, but I love it haha! Now of course I make it, but I use ranch dressing instead of the Catalina

This has been a favorite in our house since I cut the recipe out of a magazine about 30 years ago! Our kids are grown with families of their own but my husband still loves it!
