Dill Pickle Meatloaf

This tends to be one of my family’s favorite uses for zucchini when it’s in abundance; it’s easy and delicious! If you want to eat it for breakfast, leave out the chicken!

Ingredients

  1. cooking spray
  2. 1 large egg
  3. 1 small onion, chopped
  4. ½ cup dill pickle juice
  5. ¾ teaspoon salt
  6. ¼ teaspoon ground black pepper
  7. 1 slice bread, torn into small pieces
  8. 1 pound lean ground beef
  9. ¼ cup chopped dill pickles
  10. ¼ cup ketchup
  11. 2 tablespoons water
  12. 1 tablespoon brown sugar
  13. ½ teaspoon Worcestershire sauce

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8×8-inch baking dish.
  2. Beat egg in a mixing bowl. Whisk in onion, pickle juice, salt, and pepper. Stir in bread until soggy, then mix in ground beef until evenly combined. Form into a loaf and place into the prepared pan.
  3. Stir together chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  4. Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

I used twice the onions and two pounds of ground beef. I also substituted the ketchup for Chipotle ketchup for a little zing. It was amazing.

Have made this recipe a few times now. Absolutely delicious. Has turned into a weekly thing around our house! This last time I tried leaving the water out of the glaze. Wasn’t really much different just slightly thicker. Meatloaf always holds together well and tastes so good! Can’t get over it. Thanks! Edit:Got asked to make this for a birthday party. Going to attempt doing a 3 lb meatloaf with this recipe in a couple of days! Excited to say the least

Pickles and beef have been an amazing pairing dating back to Minnie and Mickey! Followed as is but only added the sauce – per another reviewer, the last 10-15 minutes. In hindsight, would have added another slice of bread. While meatloafs are not always the most “attractive” thing on your dinner table, they are economical, easy to prepare and this one IS DELICIOUS! I made this tonight for dinner. The pickle juice added a nice tang to the meatloaf. I made it in a two piece loaf pan where the fat stays in the pan when you lift out the insert. I went with the tip and only put the topping on for the last 10 minutes. I felt the topping was too thin and ended up under the meatloaf, so I spooned it on as best as I could.

I am not a fan of dill pickles but I thought I would try this just to try something different. It was really good. I did alter the recipe a couple of ways. I added some cheese because, well, I’m in Wisconsin, we put cheese in nearly everything. 🙂 I also added some of the onion to the glaze with some mustard and mayonnaise for the flavors. I think that if I do this again, I would take the water out of the glaze as it was really thin. Oh, and when I bake a meatloaf, I always free form the loaf, place it on a sheet of aluminum foil that I crimp into a bowl so that I can pour water into the pan. This helps to ensure the meatloaf stays moist.

Makes for an interesting meatloaf! I did one thing different, I added bacon to top of the loaf and the added pickle topping on in the last 15 minutes of cooking time.

CaraMeg said she wasn’t sure where the recipe came from, but her mom made it all the time when she was growing up. My mom made the same recipe. It comes from a Good Housekeeping magazine style recipe book called “350 Recipes for Ground Beef” I still have it, inherited after my mom passed away. This is an excellent meatloaf. The pickle juice in the meatloaf tenderizes the meat a little and that dill pickle glaze is sooooo goood.

Rather than being a rectangle, it plopped into an oval. You know what I mean, right? 😀 This reminded me of a cheeseburger pie I made many years ago … https://www.allrecipes.com/recipe/15120/quick-cheeseburger-pie/ … I thought that was okay. This wasn’t as good – primarily because of the sloppiness; taste was similar. ‘Not bad, but not a re-do either.

This recipe is great if you like dill pickles. If you dont, you wont like this. I use more bread because it can be less firm as another reviewer said. I also cook it a little longer. Never leftovers, everyone loves!!!

I used ketchup and shedded cheddar cheese as a topper. After it cooked the last half hour I finished Lipton’s fried onions.used same recipe 3 ingredients. Mashed potatoes.lined bottom of dish added green beans ( cooked balked in oven 350 for 25 minutes.
