Deviled Ham Eyeball Sandwich

Ingredients

  1. 20 slices white bread, such as Arnold Brick Oven White Sandwich Bread
  2. 2 cups smoked cooked ham, chopped (about 8 ounces)
  3. 1/3 cup mayonnaise
  4. 1 tablespoon honey
  5. 1 tablespoon Dijon mustard
  6. 1 tablespoon pickled relish
  7. 1/2 teaspoon Worcestershire sauce
  8. 3 dashes hot sauce, such as Tabasco
  9. Kosher salt
  10. 10 pimento-stuffed green olives, sliced in half
  11. Ketchup, for squirting

Instructions

  1. Punch out rounds from the bread using a 2 1/2-inch round cookie cutter. Lay out the rounds on a baking sheet. Set aside. 
  2. Add the ham, mayonnaise, honey, mustard, relish, Worcestershire and hot sauce in the bowl of a food processor. Sprinkle with salt and pulse until finely chopped, but still chunky. Spoon a tablespoon at a time of the ham mixture onto a parchment-lined baking sheet. Roll each spoonful into round balls. Stuff 1 olive into the center of each ball for eyes. Lay the balls in the center of the bread rounds. Squirt ketchup around the edges of the bread to mimic veins. Serve to kids and pray they don’t cry from how scary these are.

These were so easy. I found the ketchup was too sweet, and I dislike hot sauces so I made the blood-shot streaks with very thinly sliced extra pimentos. I was able to drape them from the pupil and wiggle them down the eyeball sides to look even creepier. Thank Chef Mauro!

P.S. The extra olives were delicious in a martini.

I used a ham steak, which I cooked before running through the food processor. This is good on crackers. I didn’t care for the ketchup I think we will use mustard, considering this is a Halloween idea the goblin can have a different color of blood shot eyes. Will make this again for Thanksgiving, just not do the blood shot eyes.

The eyeball sandwiches were very clever. I just made the deviled ham & it was delicious!! For health reasons we cut out processed foods last year so we don’t buy the deviled ham in a can anymore. This was such a treat. I ate it on organic gluten free crackers & my husband had his on whole grain bread. Thank you for the great recipe! Definitely a keeper.

Loved it. Only two people here to eat it when I made it so cut everything in half excluding tabasco (used alot to our tasteand ate with crackers and chips. Will definitely make again.
