Delicious Ham and Potato Soup

My friend sent me the recipe for this ham and potato soup. It is delectable and simple to prepare. What’s best? It still tastes fantastic even if you add extras like extra ham and carrots.

Ingredients

  1. 3 ½ cups peeled and diced potatoes
  2. 3 ¼ cups water
  3. ¾ cup diced cooked ham
  4. ⅓ cup diced celery
  5. ⅓ cup finely chopped onion
  6. 2 tablespoons chicken bouillon granules
  7. 1 teaspoon ground white or black pepper, or to taste
  8. ½ teaspoon salt, or to taste
  9. 5 tablespoons butter
  10. 5 tablespoons all-purpose flour
  11. 2 cups milk

Instructions

  1. Combine potatoes, water, ham, celery, and onion in a stockpot. Bring to a boil; simmer over medium heat until potatoes are tender, 10 to 15 minutes. Stir in chicken bouillon, pepper, and salt.
  2. Melt butter in a separate saucepan over medium-low heat. Add flour; cook and stir until thick, about 1 minute. Whisk in milk; cook and stir until thick, 4 to 5 minutes.
  3. Pour milk mixture into the stockpot; cook and stir until warmed through.

Delicious as is. But when my daughter asked for potato soup and I served her this, her reaction made me realize she meant baked potato soup. So I added a package of instant potatoes to thicken it and now she’s happy.

I had 3 cups of him left over from Thanksgiving. I know, it’s July. I had it in an outside refrigerator that gets really cold. My wife thought she was going to be killed by this. But it was the saltiest ham we had ever tried; I think it was intended to make it across the ocean on the Mayflower without refrigeration. Anyway, I was making the recipe when I saw that it called for 3/4 of a cup. I figured if I double the recipe I’d have twice as much ham per serving as I was supposed to have, so I just doubled the rest of it and used 3 cups of ham. Trust me, this was fine. I threw in about eight sliced up “baby carrots“ for color and I didn’t have any celery, so I used some leftover bok choy. It was fine. Speaking of which I didn’t have any onions so I used a teaspoon of onion powder. It still came out wonderful. Most of the people reading this by this point will think, “he didn’t even make this recipe.” But itcwas great. After two big bowls of soup for supper, we have five leftover portions that big for the future. My wife liked it enough that one quart portion is going in the refrigerator for tomorrow. Four completely filled quart-sized ziplock bags are headed to the freezer. I’ll be happy to have it again!

This is my go to soup. Everyone that has some, love it. To me, it is the perfect recipe. I make it quit often. I sometimes substitute the ham for Jimmy Deans hot sausage. Awesome!

I loved how the author of this yummy soup recipe suggested the best part of it was in the power of adapting it and it still turns out great! I followed basic recipe but added extra ham and onions. I also added a sliced carrot and a bit of garlic powder. I love white pepper and used a whole tsp and found I loved the zip it gave. My husband would have preferred I use 3/4 tsp. Easy and quick!

Great, easy recipe. Made almost as directed. I used 2 cups of bone broth I had in the fridge in place of 2 cups of water. Used up the rest of the Easter ham. The roux made a huge difference in the flavor, and I’m glad I did it right. It made a big pot, and I know it will taste even better later. I think I will freeze most of the leftovers. Definitely will make again!

I made this for the first time yesterday and it’s absolutely delicious! And since I am not a celery fan when it comes to soups I replaced the celery with leeks , equal measurement. To make it a little more creamier I used my hand blender for a few seconds and that’s it.

Couldn’t include a picture, it disappeared too fast. I share with my hospice dog so I used a touch of garlic instead of onion & threw in some bacon with the ham. No such thing as too much ham or bacon. Great stuff, will definitely make again.
