Delicious Black Bean Burritos

This quick and simple recipe will teach you how to create homemade hummus. wonderful with vegetables or pita chips. Really, it works well with everything!

Ingredients

  1. 2 (10 inch) flour tortillas
  2. 2 tablespoons vegetable oil
  3. 1 small onion, chopped
  4. ½ red bell pepper, chopped
  5. 1 teaspoon minced garlic
  6. 1 teaspoon minced jalapeno peppers
  7. 1 (15 ounce) can black beans, rinsed and drained
  8. 3 ounces cream cheese, cubed
  9. ½ teaspoon salt
  10. 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Wrap tortillas in foil.
  2. Bake wrapped tortillas in the preheated oven until heated through, about 15 minutes.
  3. Meanwhile, heat oil in a 10-inch skillet over medium heat. Add onion, bell pepper, garlic, and jalapeño; cook and stir for 2 minutes. Stir in beans and cook until heated through, about 3 minutes. Stir in cream cheese and salt; cook, stirring occasionally, for 2 minutes. Stir in cilantro.
  4. Spoon filling in a line across the middle of each tortilla. Fold opposing edges of the tortilla to overlap the filling. Roll 1 of the opposing edges around the filling creating a burrito. Serve immediately.

I forego the jalapeños and cilantro and add a can of Rotel (drained) with 1/2 tsp chili powder and 1/2 tsp cumin. It’s perfect and so easy to make. We love this!

Amazing burritos. I replace the cilantro with parsley and a little lemon juice because cilantro tastes like soap to me. I also give the burritos a nice sear on either side after wrapping them, it really adds something. I’ve been making these for years.

These were delicious!! I used brown rice tortilla wraps from Trader Joes which are gluten free and made the mistake if only adding 2 ounces of cream cheese instead of 3 and it still turned out great. Can’t wait to try them again.
