Decadent Chocolate Cake

Ingredients

  1. 1 cup butter, softened
  2. 1 1/2 cups sugar
  3. 4 eggs
  4. 1/2 teaspoon baking soda
  5. 1 cup buttermilk
  6. 2 1/2 cups all-purpose flour
  7. 1 cup mini chocolate morsels
  8. 8 ounces sweet baking chocolate, melted and cooled
  9. 1/3 cup chocolate syrup
  10. 2 teaspoons vanilla extract
  11. 4 ounces chopped white chocolate
  12. 4 tablespoons shortening, divided
  13. 1/2 cup mini chocolate morsels

Instructions

  1. Preheat oven to 300 degrees F.
  2. Cream and butter and sugar n a large mixing bowl, using a hand-held electric mixer.
  3. Add eggs, 1 at a time, beating after each addition.
  4. In a separate bowl stir together baking soda and buttermilk. Add flour to the butter mixture alternately with buttermilk, beginning and ending with flour. Stir in the mini morsels and melted baking chocolate, then add chocolate syrup and vanilla extract.
  5. Spoon batter into a heavily greased and floured 10-inch tube pan. Bake for 1 1/2 hours until cake springs back when touched. Remove from the oven and invert immediately onto a serving plate. Cool completely.
  6. For the topping:
  7. In a microwave bowl melt white chocolate with 2 tablespoons shortening in the microwave. Drizzle over cake.
  8. In another bowl melt 1/2 cup mini chocolate morsels with remaining 2 tablespoons shortening in microwave. Drizzle over cake.
  9. This cake can be baked in 12 mini Bundt pans. Allow 1 mini cake per serving. Freeze remaining cakes for a quick dessert for your next dinner party.

While chock full of flavor, this cake is VERY dry and the glaze is plain. It takes a long time to bake the cake, and I think’s part of why it’s so dry. A day or two later, after sitting under the dome on the cake plate it was slightly more moist, but I don’t think I’ll be making this again. I will try Food Network’s lighten up version.
