Every time my family goes camping, I almost always make this soup. Additionally, you may make it at home on the stove. Depending on your family’s preferences, you can add or remove any vegetables.

Ingredients
- 1 picked-over turkey carcass
- 1 ½ cups leftover stuffing
- 1 onion, peeled and diced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 tablespoon poultry seasoning
- 1 teaspoon ground sage
- 2 bay leaves
- 2 ½ quarts chicken broth
- 1 cup water, or as needed (Optional)
- ½ teaspoon garlic salt, or to taste
- ground black pepper, to taste
- 2 cups (uncooked) regular long-grain white rice
- 1 (16 ounce) package frozen green peas
Instructions
- Place turkey carcass in a large, deep pot. Add stuffing, onion, carrots, celery, poultry seasoning, sage, and bay leaves.

- Pour in chicken broth. Add additional water if needed to cover. Bring to a boil over medium-high heat. Reduce heat to medium and simmer, skimming off any foam, for about 1 hour.

- Remove carcass and any bones. Pick any meat off carcass and bones. Return meat to the pot and discard bones and skin.

- Season soup with garlic salt and pepper. Stir in rice and return to a boil over medium-high heat. Reduce heat to medium and simmer for 15 minutes.

- Stir in peas and continue to simmer until rice is tender, about 10 minutes more.

- Adjust seasonings to taste before serving.

Way too much rice. Use half or go egg noodles. Otherwise it’s great
More work than I usually put into carcass soup, but worth it. I picked the meat off as best I could then roasted the bones at 400 degrees for about 30 minutes turning them half way through. Used 32 oz. of chicken broth then my leftover gravy with enough water to make 3 cups. Glad I only used 1 cup of rice. No other changes. Great flavor the first day so looking forward to leftovers because usually soups are better the next day.
We all enjoyed it, even me a turkey hater. I did change a few things. I used celery salt, more poultry seasoning, carrots, and garlic powder. Used noodles instead of rice. I also used veg & chicken stock. Thank You for a great recipe.
Everyone enjoyed it! Only change I made was that I cooked the turkey carcuss overnight in a slow cooker and then picked it over. Delicious!

I boiled the carcass only in stock and water. After removing meat from carcass, added the other ingredients, including left over gravy, cutting the rice back to 3/4 cup. This was super delicious, packed full of flavor. Wonderful turkey soup.

Pretty straightforward. Used 8 ounce of mixed frozen veggies. Added cooked rice at the end.

The soup was delicious! I didn’t use the stuffing, peas, or rice. I used orzo instead. Easy to make. And then for New Year’s used a Costco chicken carcass and the breast meat.
I used water instead of broth, which with the turkey carcass made its own turkey broth. I used farm grown pure savoury in place of sage. Didn’t use peas or rice. The soup turned out great. Will make it again.
I will definitely use this the next time I cook a turkey. I boiled carcass before finding a soup recipe , refrigerated soup, skimmed off fat, went through bones to take off meat . After that I added everything except rice, put back in fridge till I got home from work, then added rice and boiled for an hour. Delish!
Very tasty and easy to make. The addition of the stuffing is a great twist. Slightly thickens the soup and adds great flavor. Definitely will make again.
I made it per the recipe with the addition of a package of mushrooms and the leftover gravy that we had from Christmas. Very hearty!
I didn’t have white rice, so I used orzo. I also didn’t have frozen peas, so I used corn. The entire family loved it! I will definitely make this soup again.
I didn’t have any poultry seasoning so made a batch myself and it was great. I also didn’t have celery but I did have some cabbage. So that got thrown in the pot.

I thought this was a great recipe, it was my first time making homemade turkey soup. A couple of mods: -I followed the advice of one reviewer and baked the carcass for about 10-15 minutes at 400 degrees before putting it in the pot. -When I make this again, I might not do 2 cups of rice it gets pretty thick. -I did not add extra stuffing only what was left in the carcass. – I did 2 qts of chicken broth and 1 qt of water. -I added a little bit of sea salt for flavor. -I did not use any peas. My husband is a great cook and he was impressed!
