Ingredients

  1. ¾ cup slivered almonds
  2. 1 cup white sugar
  3. ½ cup butter, softened
  4. ¾ cup whole milk yogurt
  5. 2 eggs
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon ground nutmeg
  9. ½ teaspoon salt
  10. 1 cup chopped dates

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 6-inch baking pan.
  2. Spread almonds on a baking sheet.
  3. Toast almonds in the preheated oven until they turn golden brown and become fragrant, about 5 minutes.
  4. Combine sugar and butter in a large bowl; beat with an electric mixer until creamy. Beat in yogurt and eggs. Mix in flour, baking soda, nutmeg, and salt. Fold 1/2 cup toasted almonds and dates into the batter.
  5. Pour batter into the prepared pan. Top with remaining 1/4 cup toasted almonds.
  6. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes.
  7. For a richer bread, substitute sour cream for the yogurt.
  8. This can also be baked in a 8×4-inch loaf pan.

This was pretty good. I didn’t have plain yogurt on hand, so I used a container of greek vanilla yogurt + sour cream to make the 3/4 cup needed for the recipe. The bread was a little on the sweet side, I’m sure due to the sugar in the yogurt that I used, so next time I’d cut back on the sugar a bit if using flavored yogurt. I do want to mention that this made (2) 7″ x 3″ loaves. I was a little thrown off by the 6″ pan requirement. My full size loaf pans are more like 8.5″ x 4.5″ x 3″, which would be the size needed for this recipe if making a full size loaf instead of the two smaller loaves that I made.
