Dark Chocolate Truffles

Ingredients

  1. 8 ounces semisweet chocolate, chopped into 1/4-inch pieces
  2. 4 ounces unsweetened chocolate, chopped into 1/4-inch pieces
  3. 2/3 cup heavy cream
  4. 2 tablespoons unsweetened cocoa, sifted
  5. 2 tablespoons confectioners’ sugar, sifted

Instructions

  1. Place 8 ounces semisweet chocolate and the unsweetened chocolate in a 4-quart bowl.
  2. Heat the heavy cream in a 1 1/2-quart saucepan over medium heat. Bring to a boil. Pour the boiling cream over the chocolate. Allow to stand for 5 minutes, then stir until smooth (now you have ganache). Refrigerate the ganache for 1 hour until firm but not hard.
  3. Line a baking sheet with parchment paper. Using a tablespoon of ganache for each truffle (approximately 3/4 ounce), portion 24 truffles, evenly space onto the parchment lined baking sheet. Refrigerate the ganache portions for 15 minutes (so the ganache will be firm enough to roll into truffles). When the ganache is firm enough to handle, remove from the refrigerator and individually roll each portion of ganache in your palms, in a gentle circular motion, using just enough pressure to form smooth rounds. Roll 16 of the rounds in 2 tablespoons cocoa and separately roll 8 in the confectioners sugar until completely covered. Store the truffles in a tightly sealed plastic container, in the refrigerator. Remove about 1 hour before serving.

I have been making these for years. When I ran across this version of the recipe and the comments I decided to leave behind some hopefully helpful info…
1.When Making Chef Marcel’s other recipe if you have difficulty with the melting, place over double boiler.
2.Add up to 1 tablespoon of your favorite liquor
3.Grind up Hard sugar cookies or other hard cookies and roll truffles in it.
4.I myself am not a big fan of raw cocoa. so I grind up sugar till powdered and add 1/4 cup sugar to 1/2 cup cocoa and roll them in that mix.

I also used 12 oz. of 68% dark chocolate. My family and I thought they tasted amazing, but the cocoa powder was a little bitter for us. The powdered sugar was much better. I had to microwave the chocolate to get it melted all the way. One hour in the fridge was way too long, as well as the 15 minutes after spooning chunks onto the baking sheet. Overall though, they were pretty good! I am 13 and I am trying to make all of the recipes possible to get maximum experience until I go to a culinary school (The CIA hopefully!. Thanks to Marcel for this recipe!

Its a great recipe and the truffles turned out GREAT! However, it is missing something – like a flavor to enhance the taste of the chocolate like raspberries or mint.

The recipe is extreamly easy and great to do with kids. However, I wasn’t thrilled with the outcome. Using premium chocolate helped but the taste lacks depth. Purhapse adding expresso or mint might help. Overall it was okay but I won’t make it again.

this is the easiest and best truffle recipe i have ever seen, cooks up just right and makes great truffle squares too
