Ingredients
- 1 (8 ounce) package cream cheese, softened
- ¼ cup white sugar
- ½ teaspoon vanilla extract
- ¾ cup sliced fresh strawberries, mashed
- 1 cup heavy whipping cream
- ¼ cup confectioners’ sugar
- ¼ cup sliced fresh strawberries
- 1 (9 inch) prepared graham cracker crust
Instructions
- Beat together cream cheese, white sugar, and vanilla in a large bowl until smooth. Stir in 3/4 cup mashed strawberries until well combined.
- Beat together heavy cream and confectioners’ sugar in a glass or metal bowl until stiff peaks form. Fold whipped cream into cream cheese mixture until evenly mixed; fold in 1/4 cup sliced strawberries.
- Spoon strawberry mixture into graham cracker crust. Chill in the refrigerator for at least 3 hours before serving.
- To test for stiff peaks in Step 2, lift your beaters or whisk straight up, and the cream should form sharp peaks.
- You can garnish the pie with additional strawberries and fresh mint.

Fantastic! Definitely will make this again and again! Had no issues with the pie setting up at the 4 hour mark. Made sure the whipped cream was at stiff peaks. Put extra sliced strawberries on top with extra whipped cream. Delicious!
This was a delicious pie just as written. I loved that I didn’t have to turn the oven on on a hot, August morning and still have a great pie for dinner. The next time I make it, I’ll add an extra 1/4 cup of smashed strawberries . I’ll also try adding a Tbls. of dry powdered milk to help the cream firm up. Delicious recipe! Thanks so much for sharing.
Make sure to use fresh, NOT frozen strawberries & whip the cream extra hard and be sure to have stiff peaks as this is crucial to the setting process. Easy recipe to follow; I placed sliced strawberries on top of the finished pie and garnished with chocolate shavings. (Can also use fresh mint leaves and/or lemon zest).

I haven’t made the recipe yet, but I wonder if making stabilized whipped cream would help it to firm up. The pie tasted wonderful, but it did not set even overnite. I have made it twice and followed the recipe with same results both times. Will try adding cornstarch next time to see if that helps . Tastes delicious!
Sooooo Good! I did substitute the fresh strawberries for the frozen ones in syrup from rouses (thawed and strained) and this is by far my favorite dessert ever!

I’ve now made this pie many times, and the key is that you must use fresh strawberries, never frozen. Everyone always loves it. My favorite way to do it is to decorate the top all over with fresh strawberries and place a sprig of fresh mint in the middle. So yummy! I am seriously debating trying this with other fruits, like blueberries for instance. Will return to let you know how it works out!
This was delicious with a chocolate wafer crust. I made individual servings in mini mason jars and everyone loved them. I increased the amount of crushed strawberries and eliminated the sugar in the heavy cream.
While it was absolutely delicious, it did not set up properly. I had to put it in the freezer. I would love to know what was wrong.

My family loved this pie. I’m making it again today! I used a regular pre-made pastry crust. I had some unsweetened freeze dried strawberries from Trader Joe’s that I mixed into cream cheese with the crushed strawberries. Extra burst of flavor! Thinking of trying with marscapone cheese as substitute for cream cheese.
I love this recipe!! My mom used to make a similar pie with canned blueberries on top. It’s great with the fruit mixed in or not. I like to add fresh berry compote on top. I’ve also made the crust with shortbread cookies instead of graham cracker. It’s a really great dessert!
Ive made this so many times but I have found that it never firms up so I mix half a pudding packet into the final mix and I also use an oreo crust ???? I do love this recipe so so much

My husband loves when I make this pie and he is not a fan of strawberries. I make a crust out of Nilla Wafer cookies instead of graham cracker.

This pie turned out so delicious and creamy! I followed everyone’s suggestions to drain some of the strawberry mash and in the middle I added a layer of slides strawberries so it looks like a layered cake. I also made extra cream and mashed strawberries to make a layer of tangy strawberry flavor on top.
