Ingredients

- 4 large Granny Smith apples – peeled, cored, and sliced
- 3 tablespoons white sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cumin
- 1 tablespoon lemon juice, or as needed
- 2 cups plain soy milk
- ½ cup apple butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 12 (1/2 inch thick) slices soft-crust French bread
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
- Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.
- Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.
- Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side. Transfer bread to the prepared baking sheet.
- Bake in the preheated oven until golden brown, about 4 minutes.
- Place 2 slices of bread onto each serving plate and divide topping among servings.
- You can use any tart, firm apples you prefer.
- Use vanilla-flavored soy milk instead of plain, if preferred.
