Ingredients
- 2 cups crushed ice, plus extra for chilling glass
- 2 ounces light rum
- 1-ounce freshly squeezed lime juice, strained of pulp
- 1/2-ounce Simple Syrup, recipe follows
Instructions
- If your glass is not chilled, do so by placing some crushed ice in it and set it aside while you prepare the cocktail.
- Place the 2 cups of crushed ice into a cocktail shaker. Pour the rum, lime juice, and simple syrup over the ice, cover, and shake well. Remove the ice from your serving glass and strain the drink into it. Serve immediately.
- Simple Syrup:
- 2 cups sugar
- 1 cup water
- Place the sugar and water into a small saucepan over high heat. Bring to a boil. Decrease the heat to medium and cook, stirring occasionally, until the sugar is completely dissolved, approximately 3 to 5 minutes. Remove from the saucepan and allow to cool completely. Syrup can be stored in an airtight container in the refrigerator for up to a month.

This was easy and delicious but I have to admit I used the standard 1:1 ratio of sugar to water simple syrup rather than the 2:1, which I think would have been too sweet for my taste. This is a very refreshing adult beverage, perfect for summer!
I found the simple syrup to be not so simple. This simpleton may have screwed it up, but the 2:1 ratio ended up too thick and got even thicker on the crushed ice. The second daiquiri I premixed with the rum and lime juice and then added to the shaker and it turned out great. Next time I’ll premix or just use twice as much 1:1.
I’ve made this many times. Great recipe and the simple syrup is great to store in the refrigerator to have for other cocktails as well. Add a few mint leaves and some sparkling water and you have a mojito. Swap out the lime for lemon and the rum for whiskey, and you have a whiskey sour.
I went to a mixology class recently and had a traditional daiquiri for the first time! I wanted to verify a simple syrup recipe. Now I have a whole recipe and it’s great!

This has been my go-to drink for the past two years. I absolutely love it! Try it with Cruzan aged rum for an interesting twist.
I tried this recipe as is, and then tinkered with it a bit (adding Cointreau once, using high-quality honey instead of the simple syrup another time). Fact is (to my taste buds, anyway), if you add anything else you run the risk of overwhelming the subtle flavor of the rum. That flavor is a large part of the magic of this sublime concoction, so I’d strongly suggest sticking with the recipe as written 🙂

love love love this! one little twist i tried tonight – i used a strawberry infused rum so i had a “strawberry daiguiri”! a friend also did it it with a strawberry vodka and it was great too!
