Ingredients
- 1 tablespoon chipotle peppers
- Adobo sauce
- 8 ounces sour cream
- 2 tablespoons mayonnaise
Instructions
- Blend chipotle peppers into a thick, moist paste. Mix the paste with adobo sauce, to taste. Stir in remaining ingredients until blended. Use in burritos and tacos.

Reminded me of the Chipotle sour cream I ate recently at a Mexican restaurant in Kauai. I substituted 2% plain Greek yogurt for sour cream for some extra protein. Its awesome with sweet potato fries. I also made beyond burgers with soyrizo and used this as a burger spread. It was bomb.
This was great….although I did put 3 canned chipotle peppers in with whatever adobo sauce was on them. It was quite spicy, but it tasted great with the southwestern zucchini and corn fritters dipped into it. I will definitely use it with other things…fajitas, tacos, etc.
Love it! What else can I use this on? I’ve done fish tacos, chicken tacos.
I had equal parts of sour cream and mayo I wanted to use up. Just add the chipotle and sauce. BAM! This is sooooooo good. I put it on all my sandwiches now and even in an omlette!
