Ingredients

  1. 1 pound cooked chicken breast, chopped
  2. 2 stalks celery, chopped
  3. ½ cup sliced almonds
  4. ¾ cup Greek yogurt
  5. 2 teaspoons honey
  6. 1 ½ teaspoons lemon juice
  7. 1 ½ teaspoons curry powder
  8. salt and ground black pepper to taste

Instructions

  1. Combine chicken with celery and almonds in a bowl.
  2. Mix Greek yogurt, honey, lemon juice, curry powder, salt, and pepper together in a small bowl. Pour dressing over the chicken salad and stir to combine.

GREAT recipe! Super EZ (I’m a real lazy cook) Used just 1tsp of honey, added 1tbsp of curry powder, 1/4tsp turmeric and 1/2 cup raisins. Stuck it in fridge for a few hours and had it with warmed Naan bread.

Made as written, this is mild enough for my 3 year old grandson but flavorful enough for the grownups. If I was to make a change, I think it needs a little brighter colors like some chopped red pepper.

Loved this recipe and will be making it for lots of work lunches. I also used less honey but I substituted honey roasted almonds for the plain almonds. Added a nice boost of flavor without being too sweet. Otherwise, stayed with the recipe and was very happy.

Good base recipe. I thought 1 tsp honey was plenty and upped the curry powder to a tablespoon.
