Ingredients

  1. 1 cup plain fat-free Greek yogurt, or to taste
  2. ¼ cup mayonnaise
  3. ¼ cup apple cider vinegar
  4. 2 tablespoons Madras curry powder
  5. 1 tablespoon honey
  6. ½ teaspoon onion powder
  7. salt and ground black pepper to taste
  8. 6 cups chopped broccoli
  9. 1 ¼ cups dried currants
  10. ½ cup roasted sunflower seeds

Instructions

  1. Whisk Greek yogurt, mayonnaise, vinegar, curry powder, honey, onion powder, salt, and pepper together in a bowl. Taste and adjust seasonings to your flavor preference.
  2. Combine broccoli, currants, and sunflower seeds in a large resealable container. Add 1 to 1 1/2 cups dressing. Cover and shake to coat. Reserve remaining dressing for another use.
  3. Chill in the refrigerator for 3 hours before serving.

I needed to make some adjustments to the recipe because of what I had on hand and because of a finicky family. I had to use all light mayo, and I doubled the honey to lessen the curry flavor (hubby doesn’t care for a strong flavor of curry). It turned out to everyone’s satisfaction! Oh yes, I had to use craisins
