Curried Broccoli Cranberry Salad

Since many of us are vegetarians, I came up with this to add a more exotic touch to the traditional bacon broccoli salad. Makes a delicious side dish for a foreign cuisine dinner and a wonderful summer potluck dish. To alter the flavor of the base, experiment with the sort of curry powder you use.

Ingredients

  1. 1 large head broccoli, cut into florets
  2. ½ red bell pepper, chopped
  3. ½ cup dried cranberries
  4. ½ cup chopped walnuts
  5. 4 scallions, chopped
  6. ¾ cup mayonnaise
  7. 2 tablespoons fresh lime juice
  8. 2 tablespoons apple cider vinegar
  9. 1 tablespoon white sugar
  10. 1 tablespoon curry powder, or more to taste
  11. ½ teaspoon cayenne pepper (Optional)

Instructions

  1. Mix broccoli, red bell pepper, cranberries, walnuts, and scallions together in a large bowl.
  2. Whisk mayonnaise, lime juice, vinegar, sugar, curry powder, and cayenne pepper together in a bowl until smooth; pour over broccoli mixture and toss to coat. Refrigerate salad until flavors blend, 2 hours to overnight. Toss well before serving.

I made several changes because I didn’t have all of the ingredients: -omitted walnuts -omitted scallions/green onions -used lemon juice rather than lime juice -used rice vinegar rather than apple cider vinegar -used 1/2 cup of mayonnaise rather than 3/4 cup It was fantastic! Definitely hot from the cayenne, so if you do not like hot (I do!!) you might want to cut the cayenne down to 1/4 rather than 1/2 teaspoon.

‘Not my first broccoli salad, but first with curry & pepper. ‘Didn’t care for it. No specific reason. Just didn’t grab me. ‘Liked the idea of dried crans in there.

We loved it! The only substitution was a little finely minced white onion instead of scallions. I do agree that the dressing does need time to develop its flavour.

Great flavour twist on a potluck favourite!! Could not bring myself to add the cayenne pepper and for me, hot enough with the madras curry powder I used. Garnish with a few cranberries and walnuts. : ) 4.5 stars!
