Cuban Sandwich Bites

For practically any protein, tomatoes make a beautiful side dish. You can use Roma or Campari tomatoes in this simple recipe. This quick and simple dish may be ready in just a few minutes with the addition of little salt and grated Parmesan.

Ingredients

  1. 1 baguette, cut into 1/2-inch slices
  2. 3 tablespoons yellow mustard
  3. 3 tablespoons Dijon mustard
  4. 1 ½ pounds Swiss cheese, sliced, divided
  5. 4 ounces dill pickle slices
  6. 1 pound honey ham, sliced
  7. 1 pound cooked pork loin, sliced
  8. ¼ cup mayonnaise
  9. ¼ teaspoon garlic powder
  10. cooking spray

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Place a cooling rack on a rimmed baking sheet.
  2. Mix yellow and Dijon mustards together and spread evenly over baguette slices. Top 1/2 of the bread slices with 1/2 of the Swiss cheese and place on the rack on the baking sheet. Top each with pickle slices, ham, pork loin, and remaining cheese. Top sandwiches with remaining baguette slices.
  3. Spread mayonnaise over the tops of the sandwiches and sprinkle with garlic powder. Spray the bottom of a second baking pan with cooking spray and place upside-down on top of the sandwiches. Weigh down the top pan with a heavy, oven-safe item such as a cast iron skillet.
  4. Bake in the preheated oven for 25 minutes. Remove top pan and bake until golden brown, about 5 minutes more.

Left out the mayo and pressed in my panini maker. Could be 5 stars if made as stated.

Real Cuban sandwiches DO NOT include mayo, Dijon mustard, or garlic powder. Lightly rub some butter on top of the bread while heating. Otherwise, ingredients are correct. A good ham to use would be Boar’s Head Sweet Slice (available at Publix). Pork should not have too much seasoning. NO LETTUCE, TOMATO, ONIONS, etc. Instead of cutting the bread into slices and making individual little sandwiches, Slice the baguette down the middle as for a regular sandwich. Assemble all the ingredients on the bottom slice, yellow mustard goes on the inside of the top slice. Cover the ingredients with the top of the baguette and put the whole thing on a sandwich press or weigh down as in the original recipe. When done, cut the sandwich into half inch slices. That way you still end up with individual slices, nicer presentation, and everyone gets a bit of the crusty top. A Real Cuban
