Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 (12 ounce) can chicken chunks, drained
- ½ cup chopped red bell pepper
- ½ cup raisins
- ½ cup stuffed green olives, sliced
- 1 tablespoon red wine vinegar
- 1 teaspoon ground oregano
- ¼ teaspoon ground cumin
- 2 bay leaves
Instructions
- Heat olive oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add garlic and continue to cook and stir until fragrant, about 1 minute more.
- Stir tomatoes, chicken, red bell pepper, raisins, olives, red wine vinegar, oregano, cumin, and bay leaves into the onion mixture; cook until heated through, 5 to 7 minutes more. Remove and discard bay leaves before serving.
- You can put rice into the pot to cook with everything else, but add 2 cups of chicken broth and simmer for 20 minutes until the rice is done. One fewer pot to wash!

Great recipe! I made it exactly as written but I couldn’t find a 12 oz can of chicken so I had to settle for a 10 oz can. (Downsizing or supply chain issues I guess.)
This is fantastic! I would never have thought to put green olives and raisins together in the same dish but it really works. Will definitely make this one again.
I used skinless boneless chicken chopped up and browned in some olive oil. This was good. Instead of raisins I will add chopped dates next time.
This is amazing!!! A big hit with the family. I just added tomato sauce ( 1 small can) for a little more sauce, and a tablespoon of brown sugar… YUM. Will definitely make this easy and tasty recipe again!
We really liked this recipe. I changed it slightly to improve on the chicken. (I started with fresh boneless thighs and chopped them up and marinated with lime and jerk chicken spice mix, I stir fried the chicken and then added about 1 tablespoon maple syrup. After cooking fully, I removed it from the pan) Then I followed the recipe only changing by omitting the olives. Thanks for a wonderful recipe.

It is a quick and easy recipe. I made almost exact, except I only had green pepper instead of red. Otherwise, exact. I wouldn’t go out of my way to make this again but I usually try new recipes a few times. My next batch I will use 1/2 of the oregano amount.
Excellent recipe. I didn’t have a can of diced tomatoes on hand so I used a combination of chopped fresh tomatoes, sun dried tomatoes and a couple of tablespoons of mild salsa. Not being a big rice fan, I served it over some mashed, baked sweet potatoes I had left over. I put a small dollop of Greek yogurt on top and it was awesome. Great recipe, thank you for sharing it. It’s definitely one of my keepers. The green olives and raisins put it over the top in flavor and interest.
Really delicious despite unique and somewhat unusual ingredients. Raisins add a touch of sweetness and olives a bit of crunch. I didn’t have green olives so I used black and I substituted shishedo peppers which were growing in my garden for the bell pepper. I had left over corn on the cob which added a nice richness.
Just had this tonight for supper and it was incredibly delicious! People, do not fear those raisins! Seriously, they meld perfectly with the other ingredients & spices. I served this over hot, buttered rice with grilled garlic bread on the side. I did make the following changes/ modifications to the recipe but they are small changes, so the original intended flavor is still present… Starting with the chicken, I used cut-up boneless, skinless thighs which I marinated for several hours in balsamic vinaigrette dressing, and then placed in a wire basket to quickly cook atop the grill. As the chicken was cooking I also fire roasted several small tomatoes; which were coarsely chopped when cooled. I did not have any green olives on hand so kalamata olives were used instead. Finally, I added homemade Sazon seasoning and a very small amount of adobo (at the recommendation of another reviewer). You know when the food is so crazy-good that no one talks because everybody is just so honed in on their meal? This was our experience tonight, thanks to this incredible recipe! No judgment but I just can’t bring myself to buy canned chicken… I used some chicken that I cooked in the slow cooker instead, and went a little light on the olives, although next time I will do the full amount. (And there WILL be a next time!) I cooked the rice right in the same pot as suggested to infuse it with more flavor. This was such an easy dish to prepare and very tasty! Thanks for this simple but excellent recipe, it is a keeper!

I liked it, I use some olives stuffed with blue cheese. Heavy on the olives.
