The milky way: Classic tres leches (three milk) cake is made with condensed milk, evaporated milk and whole milk. These cupcakes up the ante with nutty coconut milk.

Ingredients

  1. 1 1/2 cups granulated sugar
  2. 4 large egg whites
  3. 1 whole large egg
  4. 1 1/2 sticks unsalted butter, cut into tablespoons, at cool room temperature
  5. 2 3/4 cups all-purpose flour
  6. 1 cup whole milk
  7. 1/4 cup sour cream
  8. 4 teaspoons baking powder
  9. 2 teaspoons vanilla extract
  10. 1/4 cup coconut milk
  11. 1/4 cup sweetened condensed milk
  12. 1/4 cup evaporated milk
  13. 1/4 cup heavy cream
  14. 2 1/2 cups heavy cream
  15. 3 tablespoons powdered sugar
  16. 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 325 degrees F. Line two standard muffin pans with 20 cupcake liners.
  2. For the cupcakes: Put 1/2 cup of the granulated sugar, the egg whites and whole egg in the bowl of a stand mixer fitted with a paddle attachment and beat on medium-high speed for about 2 minutes. Pour into another bowl and set aside. Clean the mixing bowl. Put the remaining 1 cup sugar and the butter in the clean mixing bowl and beat on medium-high for about 30 seconds. Add the flour, milk, sour cream, baking powder and vanilla. Beat on medium until combined and fairly smooth. Return the egg mixture to the mixing bowl and stir just until incorporated. Using a 1/4-cup ice cream scoop, fill each cupcake liner with batter.
  3. Bake the cupcakes until a cake tester inserted in the center comes out clean and the tops are light golden brown, 17 to 20 minutes. Transfer the pans to cooling racks and cool for about 10 minutes, and then transfer the cupcakes to the racks and allow to cool completely before filling and frosting.
  4. For the quatro leches mixture: Whisk the coconut milk, sweetened condensed milk, evaporated milk and heavy cream in a mixing bowl to combine. Transfer to a squeeze bottle and refrigerate.
  5. When the cupcakes are cool, make the frosting: Combine the cream, powdered sugar and vanilla in a chilled mixing bowl. Whip until medium-stiff peaks form. Be careful not to over whip. Chill briefly if not using right away.
  6. To assemble: Use a chopstick or fat skewer to poke 4 or 5 holes halfway through each cupcake. Squeeze some of the quatro leches mixture into each hole; you can let it sink in a bit and then squeeze in some more to fill. Frost generously with the whipped cream frosting.

Cake: Great textures and taste. Not too sweet
Cuatro Leches: The flavors of all four milks are a perfect pairing!
Frosting: A waste of whipping cream honestly. One would do better with Cool Whip and add powdered sugar. 
If you decide to make a cake out if, use two 8 in. pans.

WOrst cupcakes I have ever made. The 4 leches was not even enough and the cupcakes should be served immediately if not you will get an extremely dense cake after you let the 4 leches get absorbed. Find another recipe this one isn’t worth the attempt

These cupcakes were soooo good. I didn’t have a squeeze bottle so instead i just dribbled the Quatros Leches mixture over the top so it soaked in. Everyone said they were amazing!

I was very excited to try this recipe when I saw it on the show. The directions were easy to follow and the ingredients did not require anything that you couldn’t find at a local grocery store. The cakes came out splendid and were very delicious. However, when I added the Quatros Leches mixture, there was this overwhelming ‘raw’ (only way I could describe it taste to the cupcakes. At first, I thought it was just me, but when my mom tried them, she said the same thing. Maybe I missed a step or one of my ingredients was spoiled, however, it was sad to such a good cake go to waste. Definitely make the cake, but don’t add the mixture to it! (Also, if you do decide to make the mixture, cut the amounts of it in half because I had a lot left over.
