Ingredients
- 4 plum tomatoes, halved lengthwise
- Extra-virgin olive oil, for drizzling
- Kosher or sea salt and freshly ground pepper
- 1 to 2 teaspoons dried thyme
- 8 1/2-inch-thick slices baguette, cut on the bias
- 1 clove garlic
Instructions
- Preheat the oven to 275 degrees. Place the tomatoes cut-side up in a shallow baking dish. Drizzle with olive oil and sprinkle with salt, pepper and the thyme. Roast 1 hour 30 minutes to 2 hours, or until the tomatoes are very soft and slightly shrunken.
- Increase the oven temperature to 400 degrees. Place the baguette slices on a baking sheet, drizzle with olive oil and bake until golden brown, about 10 minutes. Rub the crostini with garlic and top each with a roasted tomato.

Reviews
I loved this recipe but must confess to a couple of changes. I sliced the roma tomatoes in thin slices. They were ready in 20 minutes or so. Toasted the baguette slices, rubbed with garlic & placed tomatoes on top with mozzarella then back into oven til mozzarella melted. Topped with chiffonade basil. Gobbled up!
Love these! Hit with my company and what do you need to see? No brainer
I can’t see the recipe actually being made
I made this for my family! It is now a requested favorite! Excellent fresh flavor.
I am not a big tomato fan but i made these for a Christmas party for about 50 people and all of them where gobbled up I got a lot of compliments ! i even loved them very yummy! I will make them again!
A real disappointment. Even after 3 hours of roasting, tomatoes were too juicy. The thyme on top tasted like sawdust, and the tomatoes were completely inedible.
THE perfect appetizer!! My family was eating these after dessert!! I added the goat cheese under the tomato..really great!! time saver..I roasted the tomatoes the day before and served at room temperature..wonderful!!
Christmas Day HIT !! Awesome, not one left over !!
So simple with so much flavor can’t wait to make this again
Very tasty and easy. These have been a hit every time I make them. It’s great as is or you can add cheese or pesto to the crostini, but a definite go to recipe.
