Croatian Cevapi

I tried cooking cevapi for my Croatian spouse, and he really enjoyed them. I know that’s not typical, but I made it using beef and veal, and it was really fantastic! In our home, this recipe has become a standard.

Ingredients

  1. ½ pound lean ground beef
  2. ½ pound ground veal
  3. ½ cup dry bread crumbs
  4. 1 small onion, finely chopped
  5. 1 egg
  6. 2 tablespoons soda water
  7. 1 tablespoon seasoning blend (such as Vegeta®)
  8. 2 cloves garlic, minced
  9. 1 teaspoon baking soda
  10. 1 teaspoon paprika
  11. 1 pinch red pepper flakes
  12. salt and ground black pepper to taste

Instructions

  1. Line a baking sheet with parchment paper.
  2. Combine beef, veal, bread crumbs, onion, egg, soda water, seasoning blend, garlic, baking soda, paprika, red pepper flakes, salt, and pepper in a large bowl. Mix well. Shape into small sausages and place on the prepared baking sheet.
  3. Preheat an outdoor grill for high heat and lightly oil the grate. Grill sausages until browned, about 5 minutes per side.
  4. Use ground lamb or pork in the meat mixture if desired. You can shape the mixture into round patties for easier flipping.
  5. You can pan-fry the patties in oil instead of grilling them if preferred.

I made these gluten free by exchanging instant potatoes for the bread crumbs. My family loves them, and it seems I could triple the recipe, and it might be enough! I also made a tzatziki-like dip with labne, fresh pressed garlic, cucumber, lemon juice and an herb blend I made. These are also great on a warmed pita, with the labne, and fresh sliced onions!

On their own, these turned out good. If you make the Croatian White Onion Sauce recipe on this site to go with them, they are great. As suggested in the cook’s note, I replaced the veal with ground pork. I have never see or even heard of Vegeta so I Googled and did my best at making my own (minus the MSG). These held together better than I had anticipated so next time I might shape them around skewers for grilling to get a more traditional look. Regardless, this is a good recipe and one I will make again.
