Ingredients

  1. 1 large low -fat, high-fiber, burrito-size tortilla (with about 100 calories)
  2. Nonstick cooking spray, as needed
  3. 1/3 cup fat-free ricotta cheese
  4. 1 tablespoon shredded part-skim mozzarella cheese
  5. 1/4 cup thinly sliced onion
  6. 1/4 teaspoon garlic powder
  7. Salt and freshly ground black pepper
  8. 4 thin slices plum tomato
  9. 4 fresh basil leaves, plus more for serving, optional
  10. Grated Parmesan cheese, for serving, optional

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Put tortilla on a baking sheet sprayed with nonstick spray. Bake in the oven until slightly crispy, 3 to 5 minutes per side. Leave oven on.
  3. In a small bowl, mix ricotta cheese with mozzarella cheese. Set aside.
  4. Bring a skillet coated with nonstick spray to medium heat on the stove. Add the onion and, stirring occasionally, cook until softened and slightly browned, about 5 or 6 minutes.
  5. Immediately stir onion into cheese mixture. Add garlic powder, 1/8 teaspoon salt, and black pepper, and mix well.
  6. Spread cheese-onion mixture evenly on top of the tortilla. Top with tomato slices and basil leaves, and then sprinkle with a dash of salt, if desired.
  7. Return the pizza to the oven and bake until hot, about 5 minutes. Use a pizza cutter or a sharp knife to cut into slices. Garnish with Parmesan, if using. Pizza for one!

Easy recipe, kid approved. Used pizza sauce and made a more traditional pizza with roasted vegetables, cheese and cooked chicken. Worked very well. I’ve made it twice this week.

Had this for lunch and it was very good. Definately season the ricotta well. Mine needed more salt but overall a really easy and satisfying recipe.

Excellent choice it’s simple and easy to make its also low fat, high fiber great for any time of the day love the fact of per serving is at the bottom.
