Crispy Sheet Pan Gnocchi with Sausage and Peppers

Broil — instead of boil — gnocchi in this quick sheet pan dinner. Peppers, onions, tomatoes and sausage are the perfect bed for the little potato dumplings, which are crusted with Parmesan and broiled until crispy and tender.

Ingredients

  1. 1 pound sweet Italian sausage, casings removed, crumbled
  2. 1 teaspoon dried oregano
  3. 1/4 teaspoon crushed red pepper flakes
  4. 2 cloves garlic, minced
  5. 1 small green bell pepper, thinly sliced
  6. 1 small red bell pepper, thinly sliced
  7. 1 small yellow bell pepper, thinly sliced
  8. 1 small red onion, thinly sliced
  9. 2 tablespoons olive oil
  10. Kosher salt and freshly ground black pepper
  11. Two 14-ounce cans cherry tomatoes
  12. One 17.5-ounce package potato gnocchi
  13. 1/4 cup grated Parmesan, plus more for serving
  14. 1/4 cup fresh parsley leaves, chopped

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Toss together the sausage, oregano, red pepper flakes, garlic, bell peppers, onion, 1 tablespoon of the olive oil, 1 teaspoon salt and a few grinds of black pepper on a sheet pan. Pour the cherry tomatoes over top and gently shake the pan a few times to evenly distribute. Bake until the sausage is cooked through and the vegetables are soft, 18 to 20 minutes. 
  3. Meanwhile, toss the gnocchi with the Parmesan, remaining 1 tablespoon olive oil and 1/2 teaspoon salt. 
  4. Turn the oven to broil. Sprinkle the gnocchi over the sausage and vegetables and broil until dark golden brown, 3 to 5 minutes. Divide among 4 plates and sprinkle with the parsley and more Parmesan.

This was very good! I added some Mexican cheese blend on top at the end and broiled for ~30 seconds and it was really good on it too.

My family loved this! I skipped the crushed red pepper and accidentally left out the tomatoes. The Gnocchi did come out chewy. I used a different brand than normal so I wasn’t sure if that was why. I sure like not having to boil it first but may have to if my regular brand of Gnocchi comes out the same. I added 1 lb. Smoked sausage since I was feeding 5. All but 1 preferred the smoked sausage to the Italian. Look forward to making it again, with the tomatoes. I may try diced Italian seasoned tomatoes, drained.

My whole family absolutely loves this dish. I make it every couple of weeks and it is a huge hit. I’ve also used chicken sausage and it has turned out just as good. If you’re looking to add in an extra vegetable, I’ve done asparagus and zucchini. Both worked.

I didn’t care for the broiled gnocchi. It would have been better if I cooked it on the stove top first then added it to the sausage and peppers, I cooked it in my air fryer (Emeril Lagasse french door air fryer) and everything else came out great, I omitted the oregano and used hot links. Nice and spicy!

Recipe has Gnocchi as the headline ingredient. I was excited imagining me making little pillows of pure joy. But no it’s store bought rubbish in a packet. My god why??? Did not make I did save how do I unsave.

This had delicious flavor; however, it was a little too greasy for me. Next time i will cook the sausage separately and drain it well before adding the veggies. My husband didn’t care for the gnocchi, he thought it was too chewy, so I plan to substitute with ziti pasta.

This recipe is absolutely delicious. I only had orange pepper on hand, and crushed tomatoes which were my only 2 substitutions. I was really nervous about not boiling the gnocchi first, but it cooked perfectly in the oven. Next time I make this I will leave out the crushed red pepper as it was a little too much for some family members.
