Crispy Rosemary Chicken and Fries

These bourbon weenies are a fantastic starter. They have long been a favorite among the family.

Ingredients

  1. 8 chicken thighs
  2. 6 small red potatoes, quartered
  3. ½ cup extra-virgin olive oil, or as needed
  4. 1 tablespoon chopped fresh rosemary
  5. 1 ½ teaspoons chopped fresh oregano
  6. 1 ½ teaspoons garlic powder
  7. salt and pepper to taste

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper.
  3. Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness.

I followed the recipe almost exactly, except I used chicken legs and it was more than the recipe asked for. I read some of the other reviews and agree with draining the oil and the bland taste. I however forgot to put salt (my mistake). I did add basil and parsley. I also used sweet potatoes and carrots. but the flavor was simple. This is a good recipe if you’re on a diet, eating something light, or want to try something healthier. I will make this again but with some alterations, it was overall a decent meal

It gets 5 stars because my picky son loved it. He likes chicken, but he doesn’t always like other things. I had to use a few different herbs because the place we are staying didn’t have the exact. I also tossed the herbs in the bowl with the oil and I think that worked better than only sprinkling them on the top. Definitely recommend this dish. Very easy. Edited to add that I used chicken breast tenders instead of thighs because they were on clearance.

I made this with 1 chicken breast, 1 whole pheasant, yellow potatoes, 1 sweet potato and dried herbs. I took the meat out at about 45 minutes and wrapped it in aluminum foil, so the meat stayed warm in the oven but didn’t get dried out. So easy and so so good!

I used minced garlic instead of garlic powder, whisked the oil and all the herbs and seasonings in a big bowl, tossed in the chicken and potatoes, and poured all onto a baking sheet. These were common ingredients we always have on hand. And with a tossed salad, who knew it could make such a delicious meal? What a wonderful gift Ms Witek! Thank you for sharing.

Tasty, but the potatoes didn’t get crispy for me. Maybe because there was too much moisture (from water) in the oven? Next time I might add quartered onions and minced garlic.

I LOVE this recipe!!! I didn’t have red skinned potatoes so I just peeled russet potatoes and cubed them. I used the dried spices and they worked just fine. The chicken was crispy on the outside and so juicy on the inside. . .cooked to perfection. Easiest dinner I’ve ever made!

We thought this was very good. I used fresh garlic instead powder, next time I might use powder because the fresh garlic flavor stood out stronger than the rosemary (I did use fresh rosemary and might increase the amount suggested). We love rosemary. The next time I make this I will only used enough olive oil to coat the chicken and potatoes. There was way too much oil, causing the potatoes to be greasy.

Whole family liked. Used boneless skinless thighs.Lots of garlic added is yum also. Remove from baking sheet to serve, as it is sitting in a LOT of oil. Next time I’ll try with boneless skinless breasts and maybe less oil. Any type chicken will taste great in this.
