Crispy Lemon Garlic Kale Chips

Ingredients

  1. 1 bunch curly kale, stemmed and leaves torn into 2-inch pieces
  2. 2 teaspoons lemon zest
  3. 1/2 teaspoon granulated garlic powder
  4. 1 tablespoon olive oil
  5. Kosher salt and freshly ground black pepper
  6. 3/4 cup sour cream
  7. 1/4 cup buttermilk
  8. 1 tablespoon lemon juice
  9. 1/4 teaspoon ground cumin
  10. 1/4 teaspoon paprika
  11. Kosher salt and freshly ground black pepper

Instructions

  1. For the chips: Preheat the oven to 350 degrees F and place a rack in the center of the oven.
  2. Place the kale on a sheet pan in an even layer. Sprinkle the lemon zest and granulated garlic over the kale. Drizzle the oil over the top and sprinkle salt and pepper to taste. Bake until crisp, about 20 minutes.
  3. For the dipping sauce: In a medium bowl, whisk the sour cream, buttermilk, lemon juice, cumin, paprika and some salt and pepper until combined. Serve with the kale chips.

Anyone that says this isn’t awesome either doesn’t like kale or doesn’t cook well. I watched the kale carefully in the oven. 20 minutes first at 275 then about 5 minutes after flipping. Other than that I followed the directions exactly. Really good. Light, crispy, not butter at all. The sauce is really good as well. A perfect accompaniment to the glorious chips.

I don’t like kale and I think kale chips are super nasty but then I tried this recipe………SUPER DELICIOUS. The chips are good alone but the sauce really makes the flavors pop. So so good, def making these again

These “chips” were awful.  I made them twice, following the recipe precisely.  They turned out crisp and light as promised, but tasted bitter and terrible (and we love kale).  Even my husband, a real fan of kale, could not eat these.  Had to toss them (and we NEVER throw food away – ever).  The dipping sauce was good.  I used plain Greek yogurt instead of buttermilk.  But I will never make the chips again.  My rating:  No Stars.  Sorry, Nancy.  As “easy on the hips” as these may be, they were inedible.

Tried kale several ways, me nor the hubster like it.  This was GGGREAT! The lemon really made it pop.  I like Nancy, but sometimes a little too overboard with the imitations and hamming on the camera, the one thing that bothered me about Neeley’s.  just saying IMO
