Crispy Everything Chicken Cutlets

This recipe is so named because everything bagel seasoning is one of the ingredients in the breadcrumb coating for the chicken. The seasoning consists of black and white sesame seeds, dried garlic and onion, sea salt and poppy seeds and adds a distinctive flavor.

Ingredients

  1. 4 chicken cutlets
  2. Kosher salt and freshly ground black pepper
  3. 1/2 cup all-purpose flour
  4. 1/4 cup milk
  5. 2 large eggs, beaten
  6. 1 1/4 cups panko breadcrumbs
  7. 3 tablespoons everything bagel seasoning
  8. 3 tablespoons salted butter
  9. 3 tablespoons olive oil
  10. 1/2 cup olive oil
  11. 1 tablespoon Dijon mustard
  12. 2 teaspoons honey
  13. 2 lemons, juiced (about 1/4 cup)
  14. Kosher salt and freshly ground black pepper
  15. 4 cups mixed greens
  16. 1 cup halved cherry tomatoes
  17. 2 lemons, halved or sliced, for garnish

Instructions

  1. For the chicken: Heat a large skillet over medium heat.
  2. Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the flour to a shallow bowl. Whisk together the milk and eggs in a second bowl. Mix the panko and everything bagel seasoning in a third bowl.
  3. Bread the chicken by dredging each cutlet first in the flour, shaking off the excess. Next, dip into the egg wash, then cover in the seasoned panko.
  4. Add the butter and oil to the skillet. When the butter is melted, add the chicken and cook until golden and crisp (or registering 165 degrees F), 4 to 5 minutes per side. Remove to a rack to rest.
  5. For the easy lemon dressing: While the chicken is cooking, add the olive oil, mustard, honey, lemon juice and salt and pepper to taste to a mason jar and shake to combine.
  6. For the salad: Pour the dressing over the mixed greens in a bowl and toss. Add the greens to a platter, pile the chicken on top and garnish with the tomatoes and lemons. (Alternatively, add the undressed greens to a platter, drizzle on some of the dressing, pile the chicken on top, garnish with the tomatoes and lemons and serve with additional dressing on the side.)

This dish was excellent! I made more cutlets than the recipe called for so I needed to add a little more butter and oil to my pan. I also served the salad on the side as well as the dressing. The combination of the cutlets and the dressing is a perfect combo! We would dip our cutlets in the salad and dressing to get that perfect bite. My husband ate the leftovers by reheating the chicken and cutting it up and putting it in the rest of the salad and poured the dressing on it. Will make again and will make double the recipe for the dressing so we have extras. Ree you should bottle that stuff, it’s soooooo good!!!

I made just the chicken and I made it in the air fryer instead of frying it in a pan in oil it’s a little healthier then I put it in an oven to keep warm until they were all done. It was amazing! The crunch on the chicken was like fried chicken without the Greece.
We dip it in honey mustard, and that just made it better. The next time, we plan to make these as chicken strips.
If you want to air fry it, this is what I did
400 for 8 min on one side and 8 on the other. Some didn’t need the other 8 min due to being done at 165.
