Creamy Vodka Fettuccine with Tomato, Smoked Salmon, and Caviar

This is a recipe for fettucine pasta that a friend of mine emailed me. Since it consistently receives such rave ratings, I thought I’d share since I haven’t seen this on Allrecipes.

Ingredients

  1. ¼ cup butter
  2. 1 tablespoon finely chopped onion
  3. 1 tablespoon fresh minced garlic
  4. ¼ pound smoked salmon, cut into thin strips
  5. 1 large tomato, diced
  6. salt and freshly ground black pepper to taste
  7. 3 tablespoons vodka
  8. 2 cups heavy whipping cream
  9. 1 ½ pounds dry fettuccine pasta
  10. 2 tablespoons black caviar
  11. ⅔ cup freshly grated Parmesan cheese
  12. 1 tablespoon chopped fresh parsley

Instructions

  1. Melt butter in a saucepan or wok over medium heat. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add salmon and tomato and season with salt and pepper.
  2. Increase heat to high and cook, stirring constantly, for 2 minutes. Pour in vodka, reduce heat, and simmer, until liquid is reduced by half, 3 to 5 minutes. Pour in cream and simmer until liquid reduced by half again, 3 to 5 minutes. Adjust seasoning with salt and pepper.
  3. Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain, add to sauce and toss to coat.
  4. Serve sprinkled with caviar and freshly grated Parmesan cheese. Garnish with chopped parsley.
  5. The original recipe does say it yields 6 servings, but every time I serve this, I have to at least double the recipe because it goes so fast and everyone wants seconds! Sauce can be used over your favorite pasta – it’s delicious over a cheese ravioli!
  6. You can add more smoked salmon (my husband always requests this) and I always add way more than the suggested onion and garlic. If you’re out of vodka, you can omit, but it will definitely not taste the same. The caviar, Parmesan, and parsley are optional but it’s always nice to add the cheese at the minimum.

Very rich and tasty recipe. I did increase the onion to 1/4 cup (sweet onion), 8 oz. smoked salmon, and reduced the pasta to 16 oz. It needed a little more flavor, so after we started eating, I gave everyone a lemon slice. The lemon juice put it over the top. Next time, I will use at least 2 tomatoes (diced and seeded), 1/2 cup diced onion, juice and zest from 1/2 a lemon, and 1/4 tsp of red pepper flakes to add a small amount of heat.

The simple ingredients, ease of preparation, and visual appeal deserve 5 stars. I give it another 5 stars for elegance and flavor. I was surfing for an idea for dinner, saw the recipe and immediately wanted to try it . I didn’t have all the ingredients on hand – I had to sub whipping cream with evaporated milk, smoked salmon with canned salmon, fettuccine with Chinese quick-cooking vegetable-flavored noodles – and topped it off with black caviar. This dish was simply superb! I will be making it again following your recipe as is because I know we will not be disappointed. Thank you for sharing.
