Ingredients
- 2 baking potatoes
- 2 tablespoons butter, softened
- 1 tablespoon milk
- ¼ teaspoon salt
- 1 (3 ounce) package cream cheese, cubed
- 2 tablespoons sour cream
- 1 pinch paprika, or to taste
Instructions
- Preheat the oven to 450 degrees F (230 degrees C). Scrub and dry potatoes, then prick several times with a fork and place on a baking sheet.
- Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour. Remove from oven and cool slightly.
- Reduce oven to 350 degrees F (175 degrees C).
- Cut a thin slice off the top of each potato; scoop out pulp and place in a small bowl. Beat potato flesh, butter, milk, and salt with an electric mixer in a large bowl until smooth and fluffy. Fold cream cheese and sour cream into potatoes; spoon mixture into potato shells. Sprinkle with paprika and place on a baking sheet.
- Bake in the preheated oven until heated through and tops are golden brown, 20 to 25 minutes.

EXCELLENT!!!!! My potatoes were very large so I slightly increased the sour cream and crem cheese. I cut the potatoes in half and each half was a nice serving size.

This was very good. So creamy and filling. Had to add more time to cook the potato. Seeing the other comments about using microwave would work as well. I never thought about adding cream cheese into mashed potatoes, but after eating this, I will for sure do it more often.
A different approach to twice baked potatoes. Since I only needed potatoes for two people this recipe was great. I did add shredded mild cheddar cheese.

I followed the recipe exactly except for using smaller potatoes than the large baking ones. These were creamy, with a rich flavor. I’ve made mashed potatoes before with butter, cream cheese, and sour cream added in. Putting the mixture back in the shell and sprinkling with paprika makes it a little fancier…company worthy.
The potatoes were good, but a bit on the bland side. Next time I would like to add some bacon and cheddar cheese on top. It seemed like potatoes stuffed with regular mashed potatoes. It is a perfect recipe for people that like their food bland.
These were very good and very simple to make. My only change was to use cream cheese with chive spread in place of the cream cheese and I used more milk until it reached my desired consistency.
These are fantastic! Easy and tasty! I used my stand mixer to mix everything together. I was pleasantly surprised that the only cheese in them was cream cheese. This is definitely a new favorite with my family! Thanks for an awesome recipe!

This recipe was easy and delicious. I added fresh chives and finely chopped fresh broccoli into the blended mixture and twice baked the potatoes this way. This recipe was such a great way to have a potato side dish with just about any dinner.
Delicious. Added a tad more milk to help get a creamier texture. Topped them bacon bits and cheddar cheese before baking them the second time. Garnished with green onions/scallions prior to serving. They were a big hit and everyone loved them.

I followed the recipe exactly with the exception of a sprinkling of about a tablespoon of shredded cheddar cheese on top of each. Sure the filling is creamy, but the taste is about the same as if you added all of those ingredients to a once-baked potato. I’m not sure it’s worth the extra effort.
Great recipe. Only thing I did differently was add a few finely chopped green onion and then only the onion close to the chives. There was just a hint of the flavor. Was afraid someone might not like the onion part.
