Yield: 6 to 8 popsicles

Ingredients

  1. One 12-ounce can evaporated milk
  2. 4 Earl Grey tea bags
  3. 1/2 teaspoon ground cardamom
  4. One 14-ounce can sweetened condensed milk
  5. 1 cup heavy cream
  6. Handful finely chopped pistachios, plus extra for garnish

Instructions

  1. In a small saucepan over medium heat, bring the evaporated milk to a simmer until small bubbles form around the circumference of the pot.
  2. Meanwhile, snip the tops of the tea bags and add to the evaporated milk. Whisk in the cardamom. Once the milk is simmering, turn the heat off, cover and let sit and steep for 30 minutes.
  3. Strain the evaporated milk into a large bowl. Whisk in the condensed milk, heavy cream and pistachios. Pour the mixture into ice pop molds, small bowls or a large bowl. Cover the bowls with a piece of plastic wrap to avoid freezer burn and the formation of a “skin.” Pop them into the freezer and freeze overnight.
  4. When you’re ready to serve, run the ice pop mold under hot water to loosen it. You can do the same thing for the smaller bowls if you’d like to serve it as a little kulfi half dome. Garnish with more nuts if you like and serve.

I haven’t made this yet. I’m confused with “snip the tops of the tea bags”… You actually cut the tea bags and mix it with the milk???
Thomas Gonzalez
Has anyone tried this in an ice cream maker?

I love all the crunchy ness of the pistachios and the ice cream made it just wonderful!

Today I made these using ground all spice instead of cardamon, because that’s all I had.  I also put walnut halves in the mixture before freezing–what a great combination!  So creamy and the satisfying crunch from the walnuts–great variation!

These pops are YUM-meeeeee!!!  I thought they were going to be super sweet based on some of the reviews but they were just right and I like my desserts on the lower end of sweet.  The flavor profile is great and there is definitely some room to get creative.

These are wonderful. I love Earl Gray tea and with the milk/cream and cardamom, so delicious.  I’ve been craving ice cream treats and forgot about these.  Time to make them again!

I just made these pops and i had to restrain myself from just drinking them up! I wish I could give this more stars! Not overwhelming on any flavor! I used fat free evaporated milk and low fat sweetened condensed milk! Thank you Aarti! Got my summer addition on!

I really loved the tea flavor, it is very, very strong. Some of my guests thought it was too overwhelming.
Jennifer Rhodes
Overwhelming tea flavor and too sweet.

Addictively good popsicles. Creamy, spicy and nutty. A bit hard to get out of the popsicle mold, compared with other popsicle recipes, but with warm water and patience, you can totally do it.
