You have never had pimento cheese better than this! Due to its creamy texture, it is great in sandwiches and on crackers. At room temperature, serve.

Ingredients

  1. 1 (8 ounce) package cream cheese, softened
  2. 2 cups shredded extra-sharp Cheddar cheese
  3. ⅓ cup mayonnaise
  4. 1 pinch garlic powder
  5. 1 (4 ounce) jar diced pimentos, drained

Instructions

  1. Beat the cream cheese at medium speed with an electric mixer until creamy; add Cheddar cheese and continue beating until light and fluffy. Beat in mayonnaise and garlic powder; stir in pimento. Cover and chill for at least 1 hour.

Beings this was the first time I’ve tried this , I halved the recipe. I did add some of the juice from the pimento jar as others suggested , to get a creamy consistency . Very good ! Ilove this stuff.

Made this for the first time and used a few suggestions as others pointed out, I added a pinch of cayenne, and a dash of Worcestershire. I also would recommend using a high quality of shredded cheese so that it mixes well.

My favorite pimento cheese recipe. My Husband loves this every time I make it. Very easy to make and the secret is whipping the cream cheese and mayo first. It is a very light, creamy recipe that is wonderful on soft white bread or with crackers as a dip.

I was excited to find this recipe & all the wonderful reviews because I grew up eating my mom’s pimento & cheese, in which she always used Velveeta & Miracle Whip. I was looking for something similar but more “grown up” and less “processed”. This recipe just didn’t do it for me. I followed the recipe exactly except I did not drain the pimentos. I thought the extra sharp cheddar overpowered the delicate flavor of the pimentos & it was too dry. After letting it sit awhile & tasting again, I still didn’t care for it. I tried doctoring it by adding more mayo, sugar, then freshly cracked black pepper & even a splash of Worcestershire sauce & paprika, trying it over & over.
