Ingredients
- 4 large sweet potatoes, peeled and cut into 1-inch cubes
- 4 ounces Neufchatel cheese (such as Organic Valley®), softened
- ½ teaspoon sea salt, or to taste
Instructions
- Place potatoes into a large pot and cover with cold water; bring to a boil. Reduce heat to medium-low and simmer potatoes until tender, about 20 minutes; drain and transfer potatoes to a large mixing bowl.
- Beat potatoes with an electric mixer until smooth; add cream cheese and beat again until smooth. Season potatoes with sea salt.
- Serve immediately, or transfer to an oven-safe baking dish, cover, and keep warm in an oven at 200 degrees F (95 degrees C) until the rest of meal is ready!
- Substitute cream cheese for the Neufchatel cheese, if desired.

I have to agree with France C when it comes to making a more savory sweet potato dish. There are far too many sickie sweet versions. This is a good recipe to go with fried chicken. My husband really liked it. I cooked the potatoes in a bowl of water in the microwave on baked potato setting for 4 potatoes.they turned out perfectly moist and delicious. I will certainly make this recipe again.

My kids and I tried it as is and found it really bland. We tried some with a touch of maple syrup and some with a bit of brown sugar. None of the three were good enough to make again. OMG; I loved these. I had a bunch of sweet potatoes and couldn’t think of anything I wanted to do with them. This recipe is simple but don’t let that fool you. The cream cheese really creates a great consistency without adding sweetness. The salt is important too because it makes it more like a hearty side dish than a sweet, Thanksgiving kinda thing. I served this dish with grilled ham steak and sauteed squash. Whole family loved the sweet potatoes this way!

I found this recipe and didn’t have enough cream cheese to substitute for the cheese but added what I had left. I also added 2 tbsp of local honey and abt a tbsp of cinnamon as I made more than the 4 large taters. I added enough cinnamon to taste and that amt will vary based on each individual person. U can always add more once you put them on your plate.
