Creamy Ham and Cheese Quiche

With just a few basic ingredients from your cupboard, you can quickly make a stunning pink lemonade pie with pink-tinged coconut on top. A treat fit for summer would be this cooled pie.

Ingredients

  1. 1 (9 inch) refrigerated pie pastry
  2. 1 cup shredded Cheddar cheese, divided
  3. ½ cup shredded Swiss cheese
  4. 2 tablespoons all-purpose flour, divided
  5. ½ cup diced cooked ham
  6. 2 tablespoons honey mustard
  7. 1 ¼ cups half-and-half
  8. 5 eggs, beaten
  9. ¼ cup chopped green onions
  10. ¼ teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Press pastry into the bottom of a 9-inch pie plate.
  3. Bake in the preheated oven for 5 minutes. Poke holes into the pastry with a fork and continue cooking until lightly browned, about 5 minutes more.
  4. Remove crust from the oven, and reduce the oven temperature to 350 degrees F (175 degrees C).
  5. Mix 1/2 cup Cheddar cheese, Swiss cheese, and 1 tablespoon flour in a bowl; spread over warm crust.
  6. Mix ham and honey mustard together in a bowl; spoon over cheese mixture.
  7. Mix half-and-half, eggs, green onions, remaining 1 tablespoon flour, and salt together in bowl. Pour mixture carefully over ham layer; top with remaining Cheddar cheese.
  8. Bake in the preheated oven for 40 to 50 minutes until set in the center. Cool for 10 minutes before cutting.

Rather than using store bought crust, I like to make my own using Martha Stewart’s easy crust recipe. Its super flaky and tender and makes this quiche even better. I’ve made this recipe several times and its always a hit. The leftovers the next day are even better.

Very light and creamy custard finish. Used 1 1/2 C guyere and 1/2 C Parmesan cheeses, no cheddar, for lighter flavor. Sautéd green onions, 1/3 cup of de-stemmed torn spinach and 1/2 t fresh rosemary in a little butter. Used 1 T light Dijon instead of honey mustard. Half way through cooking cover in foil. I did have to make substitutions, but SO GOOD! I didn’t have honey mustard, so used Dijon. No Swiss cheese so I went all cheddar. Used a deep dish pie crust. Total baking time for me was 50 minutes. Will absolutely make this again.

Made this today & just ate a slice. YUMMMM!! Had to make a couple changes due to ingredients on hand. Used chopped sweet onion and Dijon mustard in place of green onions and honey mustard. Added some fresh asparagus tops and a garlic clove minced. Sauteed the onion for a couple minutes, added asparagus pieces to skillet & sauteed til they began to get tender; added the ham, garlic & Dijon to the skillet; stirred & sauteed until ham was warm & garlic was tender. Sprinkled a little flour over bottom of crust. Sprinkled ham mixture over floor of crust and sprinkled more cheddar/swiss over the top. Baked

I had some cooked asparagus on hand so I added 3/4 cup to this recipe. I left out the flour and it really didn’t need it. To save prep time, I mixed all ingredients together (minus the cheese for the topping) and it turned out great. If you are watching your carbs, leave out the pastry crust and just poor mixture into a buttered pie dish. My quiche was done in 40 minutes. Very tasty dish.

Made this for supper last night, and my family absolutely loved it! The honey mustard really sends it over the top. I followed the recipe exactly. My wife doesn’t especially like swiss cheese, but the combo of swiss and cheddar was subtle and very tasty. I used a store-bought pie crust, and that was the weakest part of the whole thing. I’ll try a different brand next time.

I included lightly steamed Broccoli. That made my slices uneven and lopsided, so I have more to learn about that – but the outcome was delicious
