Ingredients
- 3 cups fresh green beans, trimmed and cut into 1-inch pieces
- 1 tablespoon baking soda
- 1 ½ cups peeled and diced potatoes
- 2 cups water, or as needed
- ⅓ cup melted butter
- ½ cup diced onion
- ⅓ cup bacon bits
- 1 (10.5 ounce) can cream of chicken soup
- 3 cups milk
- salt and ground black pepper to taste
Instructions
- Place green beans into a pot with enough water to cover. Add baking soda to the water; bring the mixture to a boil, reduce heat to medium, and cook until green beans are nearly tender, 7 to 10 minutes. Drain water from green beans; set aside.
- Place potatoes into a large pot with 2 cups water or enough to cover; bring to a boil, reduce heat to medium, and continue cooking until almost tender, about 20 minutes. Remove from heat, but do not drain the water from the pot.
- Heat butter in a large skillet over medium heat. Cook onion and bacon bits in melted butter until onions are soft and translucent, 5 to 7 minutes; add to the large pot with potatoes, and add in cream of chicken soup and milk; stir until smooth. Add green beans. Season with salt and pepper.
- Place the large pot over low heat and cook the soup at a simmer until hot and the flavors have melded, about 30 minutes.

This is one of the best soups I found so far on this site. I read the reviewers and I would like to address some of the complaints. This soup has a secret: it is best to have it boil the second time while adding bacon bits. And after to leave it overnight to cool on the counter. When I came to the kitchen in the morning, it was still warm and the taste was out of this world. I used whole Lactaid milk. The only change I made was to use the baking soda while I soaked the green beans. I will make it again. Excellent!
Had to modify a bit and it turned out really good! 2 c milk, 1 c chicken broth, about 1/3 c Myoki’s vegan cream cheese, 1/3 c Myoki’s vegan butter, 1 small clove garlic minced. 1 T flour during simmer if too thin. No pepper. No canned soup, no butter. Every thing else the same.

This is a great base for the soup. I had a hambone I needed to use so I cooked it in about 4 cups of water with some salt and 1 tsp dried thyme(personal taste). I used the strained broth to cook the potatoes until they were almost done then added frozen cut beans til cooked. I mixed the cream of chicken soup with only 1 cup of milk and added that to the soup. I wasn’t sure how to add onions so I cooked them separately in a pan with bacon drippings. Next time I’d add them with the potatoes. Thanks for submitting this easy and delicious recipe. I appreciated the addition of a cream soup to this recipe. I like recipes that have a good base and I can add or change things to my taste.
Came out AMAZING!! I added a few different things.. I followed the recipe as it said but when I melted the butter for the onions and bacon I also added 2 tbps of minced garlic 2/3 cup of bacon and a tsp of adobo, then I mixed the condensed chicken soup with 1 cup of chicken broth and 2 cups of milk.. once everything was done sautéing I added all the ingredients together along with the potatoes that were set aside and it came out very flavorful and really delicious!!
I’m giving this 4 stars for overall flavor. I chose this recipe because of the ingredient list……how bad can it be when there is bacon?! As I read the instructions I thought it to be labor intensive and losing nutrients when tossing out the cooking water. Instead, I sauted the onion and bacon till tender. then I tossed in the diced potatoes and cooked a little bit. Finally I added the green beans and a cup of broth, salt and pepper stirred it all up and simmered until veggies were tender. Lastly I added a can of Cream of Mushroom and more broth to make it ‘soupy’. Husband loved it!
This was really good! I used skim milk and also added some cooked chopped turkey sausage for a little more protein. It was great!

My husband liked it more than I did. It just didn’t have enough flavor for my preference. I also didn’t use the soda because even though it makes the green beans more colorful, it makes them too mushy.
This stuff is amazing! I used real bacon as well! I also added some bacon grease..may not be healthy but it sure was good! Its the soup version of the meal my best friend makes, she calls it Slop! But it oh so wonderful!! 🙂 Husband thought it was good but i don’t believe he was a big fan…still will cook it once a week though! Ha!
