Ingredients
- 4 eggs
- 3 tablespoons sour cream
- ½ cup shredded mozzarella cheese
- salt and pepper to taste
- 2 teaspoons butter
- 1 tablespoon minced fresh basil
Instructions
- Whisk eggs and sour cream in a bowl until creamy and smooth. Mix in cheese. Season with salt and pepper.
- Melt butter in a skillet over medium heat. Pour in egg mixture; cook, stirring constantly, until eggs reach the desired consistency. Mix in basil during final minutes of cooking.

I really like this recipe and will keep using it. I used fat-free sour cream and it turned out very well. I served it with lightly buttered toast and fresh fruit. What a great breakfast! But this could also be a quick fix for dinner!
I’m not a huge scrambled egg fan; I usually have to douse them in hot sauce or salsa. This is the first recipe for them I’ve found that I don’t have to add anything to… delicious!

I didn’t have any basil on hand, so I substituted Italian seasoning. It turned out to be an okay recipe with some degree of flavor. I’m not sure if I would make it again, but would make modifications if I do.
This is so delicious. I have tried using other herbs, like dill and rosemary! I usually make this once a week for myself and my kids.

I made it for a breakfast group that i cook for. They enjoyed it and felt they were having a gourmet breakfast. I felt it was a bit bland, needed some punch. I will substitute parmesan cheese for some of the mozzarella. Probably will add garlic and maybe some italian seasonings.
Super easy and very good. I love eggs and I love basil, so how I never tried this earlier is a mystery. I made this recipe and put it in a tortilla for a breakfast wrap. Really good!
