Creamy Cheesy Grits

Ingredients

  1. Salt and freshly ground black pepper
  2. 3/4 cup quick grits
  3. 1 cup milk
  4. 1/2 cup shredded mozzarella
  5. 1/2 cup shredded Cheddar

Instructions

  1. In a saucepot over medium-high heat, add 3 cups water and a pinch of salt. Bring the water to a boil, and then stir in the grits and milk. Raise the heat to bring to a boil again, and then lower to a simmer and cook for about 4 minutes. When the grits begin to thicken but there is still plenty of moisture left, add the mozzarella and Cheddar along with a few grinds of pepper. Stir to melt the cheese, taste and season with salt, if needed. Serve warm.

I tried this recipe because my mom can not swallow solids but she loves cheese grits. I changed the recipe a little because she likes her grits really, really cheesy. I added 1 1/2 c. shredded colby jack, 1 TB of mascarpone, 1/2 oz of cream cheese, and a lot more salt. I also added 2 TB of grass-fed salted butter (We are in South Georgia where every recipe needs butter, especially grits :)) I cooked mine way longer than 4 minutes, grits were not done at that cooking time. My mother ate all that I served her!! I thought they were delicious too.

Very good recipe. I substituted coconut cream almond milk for regular milk because I have a sensitivity (I hate it in my coffee)and added 1 teaspoon garlic powder, suggested by another poster. Delicious!

Used this as a base for shrimp and grits and OH BOY was it delicious. I subbed in reduced fat cheeses (because that’s what I had on hand) and it still turned out amazing. I suspect that the full fat version is even better.

This is an easy recipe to follow – just be sure to whisk the grits as your pour them in or you’ll end up with clumps. We also added garlic powder and it turned out great!
