Creamy Cajun Chicken and Sausage Fettuccine

Ingredients

  1. 8 ounces hot Italian or sweet sausage, removed from casings and crumbled
  2. 8 ounces boneless, skinless chicken breasts, cut into bite-size pieces
  3. 2 small red and/or green bell peppers, sliced
  4. 1 small onion, chopped
  5. 1 clove garlic
  6. 3/4 cup reduced sodium chicken broth
  7. 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
  8. 8 ounces fettuccine, cooked and drained

Instructions

  1. Cook sausage in 12-inch nonstick skillet over medium-high heat 4 minutes or until cooked. Remove sausage to paper-towel-lined plate.
  2. Season chicken, if desired, with salt and pepper. Cook chicken in same skillet, stirring occasionally, 4 minutes or until chicken is thoroughly cooked. Remove chicken from skillet and set aside.
  3. Stir red peppers and onion into same skillet* and cook, stirring occasionally, 4 minutes or until tender. Stir in garlic and cook, 30 seconds. Stir in broth and Hellmann’s® or Best Foods® Real Mayonnaise. Bring just to a boil over high heat. Reduce heat to low and simmer 1 minute. Stir in fettuccine, chicken and sausage and cook, stirring occasionally, 1 minute or until heated through. Season, if desired, with salt, pepper and crushed red pepper flakes.

I was looking for help making a sauce. This was a great start. The mayo will break up but keep stirring and with reducing it will work out.

This was amazing! 2 bell peppers seemed like a lot, so I only put 1 and 1/2, and that seemed perfect. I seasoned the chicken with salt, pepper, and Tony Chachere’s. I used Cajun sausage, which was already cooked – so I skipped the sausage-cooking step. This dish was very savory and delicious. I’m not sure why it’s called “Cajun” though, unless you use Cajun seasoning or meat. Will definitely cook this again.

This recipei is Amazing! My husband loved it! Even my 2 yr old daughter loved it! It has great taste.. I didnt include sausage but it was still very good! : I will Definitely make it again.
