Ingredients
- 2 cups chopped celery, divided
- 2 cups chopped carrots, divided
- 4 tablespoons butter
- 2 cups onions, diced
- 3 tablespoons flour
- 6 cups hot vegetable broth, divided
- Salt and pepper to taste
- 1 cup heavy cream
Instructions
- In a small saucepan add 1 cup celery, 1 cup carrots, 1 cup vegetable broth. Bring to a boil and cook until tender, about 4 minutes. Drain and reserve cooked vegetables. In a large saucepan, over medium high heat, melt butter. Add onions and saute until clear. Whisking, add flour, cook 2 minutes making sure flour does not brown. Add 5 cups vegetable broth and continue to whisk until mixture boils, making sure to reach the bottom of the pan. Add uncooked 1 cup celery and 1 cup carrots. Bring mixture to a boil, reduce heat, and simmer about 30 minutes. When cooked strain soup through a fine sieve into a clean pot reserving vegetables. In a blender puree vegetables with 1 1/2 cups of liquid. Stir puree into pot with liquid. Stir in cream, reserved vegetables. Heat and serve.

This was delicious! My husband and I both enjoyed it. I had a lot of celery to use and I added the 2 cups of celery suggested and the garlic. I used Better Than Bouillon Vegetable Base and did not add any salt and pepper. I used only 1/2 C of heavy cream. I will definitely make this again!!
Excellent creamy soup! I cooked 4 cups of chopped celery, 2 cups of chopped carrots and 2 cups of chopped onion, also used low sodium chicken broth. Put it all in the vita-mix, added in the heavy cream and enjoyed a great soup.
The soup was tasty but didn’t taste like cream of celery. As a matter of fact it really didn’t taste like any one vegetable just a cream of vegetables soup. And, it was orange – did I do something wrong???? I thought cream of celery soup was supposed to be creamy/greenish color not orange.
I didn’t want chunks, and I pureed all the veggies.

I’m not a big carrot person and had a bunch of left over celery, so I substitued celery for the carrots. I also used chicken broth instead of vegetable.
I added a few cloves of garlic and this was wonderful. My boyfriend had his doubts but loved it. I like the creaminess of the soup with the tiny chunks you add in at the end. And it has no meat so you can fed it to the hard to please vegetarians.
.. for as long as you like celery. I don’t think I’ll make it again.
This soup is perfectly great before adding the cream. I added it anyway, which kinda took away from it. Next time I’ll make it without the cream.
I didn’t take anything out of the pot,as the directions suggested for blendidge. I simple tilted the pot and used my immersion blender.

I know it says celery soup, and you’d think that means it’s turn out green, but no mine turned out orange and had a slight carrot flavour.
If you go ahead and make this soup, it’s not horrible, but I?d suggest adding some Paprika, it gives it some life and helps perk it up a bit. Or if you like your soup bland, be my guest.
