Cream Cheese-Stuffed French Toast with Strawberries

With sponge cake, whipped cream, and fresh strawberries, this traditional German strawberry roll (Erdbeerrolle) dish is prepared. Strawberry season is when I make my favorite cake! More whipped cream and more strawberries can be used to adorn the outside if you’d like.

Ingredients

  1. 1 pound bread, cut into 1/2-inch cubes
  2. 1 tablespoon unsalted butter, softened
  3. 2 cups sliced fresh strawberries
  4. 1 (8 ounce) package cream cheese, softened
  5. 6 large eggs
  6. 2 cups half-and-half
  7. 1 cup heavy cream
  8. 1 tablespoon white sugar
  9. ½ teaspoon ground ginger
  10. ⅔ cup white sugar
  11. ½ cup all-purpose flour
  12. 4 tablespoons unsalted butter, softened
  13. 1 teaspoon ground ginger

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C). Place bread cubes on a baking pan.
  2. Toast bread cubes in the preheated oven until dry and golden brown, about 20 minutes. Remove and let cool slightly, about 10 minutes.
  3. Grease a 9×13-inch casserole dish with softened butter. Add bread cubes, strawberries, and cream cheese dollops randomly to the dish.
  4. Whisk eggs, half-and-half, cream, sugar, and ginger together in a separate medium bowl. Pour egg mixture over bread and strawberries, wrap with plastic wrap, and refrigerate, 8 hours to overnight.
  5. Remove casserole from the refrigerator 1 hour before baking.
  6. Preheat the oven to 350 degrees F (175 degrees C).
  7. Make the streusel topping by mixing sugar, flour, butter, and ginger with a fork until moist crumbs form.
  8. Bake in the preheated oven until set, about 30 minutes. Sprinkle streusel on top. Continue baking until top is golden, about 30 minutes more. Let rest for 10 minutes before serving.
  9. I used dinner rolls to make the bread cubes.

Used brioche bread. Used all half n half , And swerve for the sugar. Apparently swerve isn’t very sweet. It was really good although next time I might have to add a little regular sugar in though Cooked mine for about an hour and 20 minutes

Hot and Luscious Cream Cheese Pillows! What a fun overnight french toast recipe this is!! The cream cheese created a hot, luscious and creamy texture and the strawberries a freshness. My husband said the cream cheese added to his anticipation and enjoyment with every bite. The only change I made was the addition of 1 tablespoon of vanilla.

I used cardamon in place of ginger, organic Agave Inulin Powder in place of sugar and used buckwheat. Was awesome and will make again in the near future.
