Cream Cheese ‘n Herb Cucumber Bites

Cucumber ‘boats’ that have been hollowed out are then chopped into bite-sized pieces and filled with a creamy chive, onion, and grated carrot mixture.

Ingredients

  1. 1 carrot, shredded, divided
  2. ½ cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
  3. 2 cucumbers, cut lengthwise in half, seeded

Instructions

  1. Reserve 2 Tbsp. carrots. Mix remaining carrots with cream cheese; spoon into cucumber shells. Top with reserved carrots.
  2. Cut each cucumber half into 5 pieces to serve.
  3. Let the kids make cucumber “boats” instead! Just fill the cucumber shells with the cream cheese mixture as directed. Then, add snow peas for the sails. Decorate with other cut-up fresh vegetables as desired to resemble colorful sailboats.

These were ok. I made these for a super bowl party and had a lot of leftovers. Next day the cucumber got soft and soggy. Probably will not do again.
