Ingredients

  1. 9 large potatoes
  2. 1 (8 ounce) package cream cheese
  3. 1 cup sour cream
  4. 2 tablespoons butter
  5. ¼ cup minced green onions
  6. salt and ground black pepper, to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2-quart baking dish.
  2. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  3. Mash potatoes in the pot with a potato masher or fork until smooth. Stir in cream cheese, sour cream, butter, green onions, salt, and pepper. Spoon into prepared baking dish.
  4. Bake in preheated oven until golden and bubbly, about 1 1/2 hours.

Tastes amazing. Add about 1/3 cup of the potatoes’ boiling water to mashed potatoes. Noobs to cooking: This is the kind of recipe that doesn’t require exact measurements so don’t worry if you’re unsure of how many potatoes/size, exactly. Cook this as it states to. It tastes best but is fine if you wanna skip baking. But if you bake it (I only did 1 hour) the crunchy top is SO good. Even if you’re not the type to like the crunchy bits of a casserole… You gotta try it. Heaven.

Based on the leftovers I had after the meal, these potatoes will be very stiff and dry if made in advance and refrigerated. You may need to stir them up well and add some milk or other liquid of your choice before reheating. The flavor is wonderful, however! I made no changes to the ingredients and served immediately after baking. Rave re views!

I cut the recipe down… didn’t need quite that amount of mashed potatoes for just three of us! I used 5 potatoes, 1/2 cup sour cream and about 4 oz. of the cream cheese. I also added a little heavy cream to it. I’m not sure why it called for baking it? They tasted great without the baking, but maybe next time I’ll try baking it and then add a little shredded cheese and bacon to the topping!

I made these ahead of time for thanksgiving dinner! I opted out of using onions and I used potato water as suggested below. I put them in the oven, covered for about 30-45 minutes before dinner to heat them through and they were a hit! I would make them again and again!

I followed this recipe exactly except that I only put them in the oven long enough to warm them before dinner (about 10 minutes). Instead of sour cream, I used Greek yogurt. It made it super thick, so I added more butter. It balanced out perfectly.
